Tokyo's Michelin-starred sushi specialist brings authentic Japanese fine dining experience to Macau

 

MACAU - Visitors and guests at City of Dreams Macau can look forward to indulging themselves in an authentic Omakase experience delivered by a team of seasoned Japanese sushi chefs trained by Master Shinji Kanesaka, one of the most renowned sushi chefs in the highly competitive Ginza district of Tokyo.  Named Shinji by Kanesaka, the Macau outlet is coming soon to City of Dreams Macau's Crown Towers, which will mark the reputed Kanesaka brand's debut in Greater China. The opening will also diversify the premium dining offerings at City of Dreams Macau and further raise its reputation as one of the finest dining destinations on Cotai, Macau.

 

Constantly pursuing perfection and esteem for Japanese culinary tradition, Master Kanesaka believes that perfection is a state of continuous improvement without compromise, which is why he and his team of talented chefs use only the finest and the freshest ingredients to craft the most exquisite Japanese fine dining experience in Omakase style. Born in Chiba Prefecture in 1972, the sushi maestro opened his first restaurant Sushi Kanesaka in the prime Ginza district of the capital of Japan at a very young age of 28. The restaurant is considered a temple of sushi by his legion of fans and has been on the Michelin star award list since 2008.

 

Helming the kitchen of Shinji by Kanesaka at City of Dreams Macau are Chef de Cuisine Toru Osumi and Senior Sous Chef Kenichi Fujimoto, who have both been trained by Master Kanesaka and qualified by the maestro as successors of his spirit of sushi, “Sushi Do.” Both chefs have also inherited Master Kanesaka's craftsmanship – hand-making sushi of traditional Edomae style from the freshest fish, rice and wasabi with artistic techniques added to it. Fish and seafood supplies will be personally selected by Master Kanesaka in the world-renowned Tsukiji Market and flown out directly to Macau four times a week.

 

The debut of Shinji by Kanesaka in Macau represents an exciting addition to Crown Towers' existing upscale dining offerings, which are characterized by contemporary French restaurant The Tasting Room and Chinese culinary masterpiece Jade Dragon – both have continued to shine with a Michelin star rating since 2013 and 2014 respectively, making City of Dreams Macau successful in maintaining its status as the property with the most Michelin-starred restaurants on Cotai this year. Crown Towers at City of Dreams Macau also prides itself as the first and currently the only hotel brand on Cotai to have received complete Forbes Travel Guide Five-Star achievement for all of its facilities, including the hotel, restaurants and spa.
