A New York inspired neighbourhood wine bar has launched on the corner of George Street and Bond Street, taking up a unique ground floor frontage. Georgie brings a relaxed wine bar experience alongside a luxurious cosiness to the CBD bar scene.
Drawing inspiration from the classic art deco design and neighbourhood New York vibes, Georgie pays homage to the heritage of the CBD while adding a contemporary twist. The new 60 seater fit out features a moody colour palette juxtaposed against luxurious textures such as marble, velvet, and accents of gold, all against a backdrop of inviting curves and retro sleek white and black tiles.
The constantly evolving wine list is a repository of old and new world wines, centred on stalwart winemakers. On the cocktails list, renditions on classic Martinis and Manhattans are served in vintage glassware, paired with a myriad of snacks.
“We didn't want Georgie to be constrained by a particular theme, instead we are pouring wine that we are loving at that moment. A healthy sized Coravin pour selection features some of our more treasured favourites that we manage to get our hands on,” said Susie Shelley, General Manager.
Ex Shell House and Aria, new Head Chef Gil Ghidalia has brought a creative concept to the CBD. The Parisian-born chef, who is well versed in classic European wine bar offerings, has played with the New York connection while maintaining a produce-driven, down-to-earth approach with the menu.
“Our menu oozes personality and character, welcoming people in from the bustling streets. We are offering commuters and local corporates an immersive all day experience to entice them to stay and play in the CBD,” he said.
The venue offers a morphing dining experience throughout the day, with a street-side coffee window slinging oversized pretzels and playful bagel renditions in the mornings. As lunch and dinner nears, the focus is on sophisticated yet humble share plates, such as 'Surf and turf skewers', 'Classic prawn cocktail', and a 'Luger inspired steak frites with a side of Kohlrabi Waldorf'.
Ghidalia also has plans for a mystery snack to be available in evenings from the street-side window for those on their way home, suggesting a 'Reuben eclair' or a 'Rockefeller toasty'.
