Cheese lovers rejoice! Cheddar days are coming as The Westin Melbourne welcomes the return of its beloved High Cheese to Allegro Restaurant in June. This year, the indulgent and brie-lliant High Cheese menu has been curated in collaboration with renowned cheese aficionados, brother-sister duo The Studd Siblings, Ellie and Sam Studd.
The Studd Siblings, both members of the International Guilde des Fromagers and Certified Cheese Professionals, have teamed up with Executive Chef of The Westin Melbourne, Apoorva Kunte, to curate an exquisite three-tiered selection of sweet and savoury treats. Each creation showcases the finest quality cheese from around the globe, perfectly paired with a selection of wines by Scotchmans Hill, including single-vineyard wines by Chief Winemaker Robin Brockett.
“We are very excited to bring back our much loved High Cheese this year. Drawing from my personal travels and through collaboration with the Studd Siblings, we have come up with a menu that showcases some of the best producers from around the world and locally, with a few surprise dishes I know people will love” says Chef Apoorva.
Cheese enthusiasts will dive into a world of decadence with the first tier dedicated to cloth-aged cheddar and candied apple scones, accompanied by whipped organic butter and Singing Magpie Smyrna quince nectar.
Savoury items, which feature on the second tier include:
- Tart of vine-ripened tomato tartare, Sarakatsanj tribe inspired ewe's milk Galotyri, with Congo potato
- Woombye triple cream brief layered with truffle, mushroom and macadamia cervelle de canut
- Dreaming Goat dairy chevre, homemade fig and pistachio confiture
- L'Artisan organise Mepunga Gruyere Welsh rarebit with champagne and English mustard on olive and rosemary sourdough
- Le Conquerant baked Camembert studded with lemon thyme and garlic
- Served with grapes, Lavosh, date and apricot sourdough crisps
A lavish assortment of sweets will follow, including:
- Basque chocolate cake, Tasman pepper berry salt
- Sustainable Cacao Trace 55% dark Chocolate, Cote d'Ivoire
- El Esparto cave-ripened Manchego cheese bavarois, candied pineapple
- Vanilla bean and goat's curd panna cotta, house-made rhubarb compote, with fresh raspberry
Whilst Ellie loves the playfulness of the El Esparto Manchego, Sam Studd says: “My perfect bite is the Le Conquerant baked camembert studded with lemon thyme, ooey gooey, bit of funk in the trunk Winter warmer deliciousness.'
This High Cheese offering will be available in Allegro Restaurant from 19 June until September. High Cheese at The Westin Melbourne is available by reservation only. About the Studd Siblings:
Ellie and Sam are members of the International Guilde Des Fromagers, and they are ACS Certified Cheese Professionals (CCPs). They spend their time hand-picking artisan cheeses alongside their dad for the 'Selected by Will Studd' range, and working to share these cheeses with the US and Australian markets. They are also passionate about education – working closely with cheesemongers and chefs, running masterclasses In 2023, they released their first book called The Best Things in Life are Cheese with Plum Publishers.
