Iconic Sydney hotel, Pier One Sydney Harbour, will unveil its new restaurant, PIER dining, opening its doors on May 1st 2024. A harbourside experience showcasing the best of warm Australian hospitality, PIER dining will replace The Gantry to offer a seafood-driven menu in a relaxed and approachable setting.
“For the past eight years, Pier One Sydney Harbour has led with fine-dining degustation and chef-selection menus”, states Pier One Sydney Harbour General Manager, Kim Mahaffy. “After listening to our guests and the local community we have evolved the restaurant to celebrate a more casual and relaxed style of dining, leading with an a la carte menu, or feed-me menu for those wanting to take the hassle out of ordering. PIER dining is perfect for a quick pre-theatre bite or a more leisurely dining experience as a solo guest or sharing amongst friends”, Mahaffy continues.
The restaurant's legacy of showcasing emerging chefs will remain at the forefront, with Chef De Cuisine Dimitri Damman at the helm of PIER dining. Hailing from France, chef Dimitri brings a wealth of expertise working in esteemed international restaurants and has trained with Australia's best chefs at Pier One since 2015.
Situated in the Walsh Bay creative precinct, PIER dining offers a connection to the Harbour through its prime location right on the water at Sydney Harbour and through a menu that weaves in the story of an underwater forest that resides beneath.
Built on historic beams stretching 30m into the sea at the deepest point of the harbour, an underwater forest thrives beneath the pier and comes to life at PIER dining. From the decor to garnishes on the menu which will feature nods to the seaweed growing in the underwater forest.
PIER dining celebrates a unique connection to Sydney's maritime history, the industrial roots of Walsh Bay, and the significance of the pier it stands on. The restaurant has woven this heritage through the modern seafood-led menu paying homage to the Oyster Bar and Crab Cooker which the pier once housed.
The seafood-driven menu features produce from nearby shores in refreshing takes on familiar favourites, such as a King George Whiting 'Parmi' or a Campanelle Carbonara with Home-Cured Kingfish Collar.
The joy of experiencing a meal together will come to life as the signature dish, Queensland Coral Trout with Green Mango, Chilli, Ginger and Coriander, is served up tableside.
The Sydney Rock Oyster is the real star of the menu - available freshly shucked with mignonette, or charred with smoked wagyu fat and coconut vinegar.
In a continuation of the celebration of Australian design, PIER dining has worked with Sydney based companies Defy Designs to introduce environmentally friendly coasters and Australian design studio Dinosaur Designs for seaweed salt jars for the restaurant.
