Having softly opened its doors over the festive season, the precinct has found its culinary stride with the inclusion of the exotic bar and eatery.
Seamlessly blending contemporary Caribbean cuisine with innovative cocktails, BAHA Poolside Bar & Kitchen strikes a perfect balance between relaxation and elegance. The 220-seater art-deco venue features a picturesque poolside setting with tropical accents for hotel guests and patrons to immerse in.
Since its inception, the goal has been to create a vivacious venue where groups can gather for shared-style feasts or where the after-work crowd can unwind amongst an inner-city oasis. The Adnate General Manager, Maurits de Graeff, a key driver behind the concept advises that the name "BAHA" echoes the heartbeat of the Caribbean, evoking that sense of tropical tranquillity.

Drawing from his personal experiences living in Costa Rica and Mexico, Maurits is passionate about recreating the vibrant and relaxed ambience of tropical beachside establishments.
"I missed the vibe we had over there so, we've curated a space where guests can unwind, indulge, and feel like they've escaped, if only for a few hours."
A contemporary take on traditional Caribbean cuisine, the menu fuses Northern South America with influences from Colombia and Venezuela. Hailing from Columbia is Head Chef Santiago Ortiz who leads the kitchen team. Bringing passion and expertise, he expresses that the curated selection of small and large plates boasts authenticity whilst still offering plenty of crowd-pleasers.
“Combining my Latin-American heritage and my desire to use local produce has allowed the team and I to blend both cultures perfectly and create a flavourful menu for any group occasion.”
With a strong food offering, comes a fresh and fun beverage menu crafted by Assistant Bar Manager Will Brechin. Working with 60 local and international distillers, it comes as no surprise that the impressive rum collection also showcases exclusives in collaboration with BAHA Poolside Bar & Kitchen, one with local distillery Wild Road Spirits which has aromas of green apple, melons and tropical fruit. Both bold and prolific, the mouthfeel is raw and textural, reminiscent of the sugar cane it was distilled from.
When crafting the cocktail menu, Will advises that he hopes to transport pallets somewhere exotic through innovation and ingredients.
"We often infuse various rums ourselves, using flavours such as strawberry, grapefruit, and mixed berry, which we then incorporate into our colourful cocktails."
