The Porter House Hotel Sydney MGallery is proud to announce the appointment of Steven Hartert to the role of Executive Chef, bringing over two decades of luxury hotel and fine dining experience to the role. Chef Hartert has been appointed to drive a new culinary direction, showcasing the best Australian produce at Dixson & Sons, Henry's Bread & Wine, and Spice Trader.

Trained in Germany, Chef Hartert started his career at Berlin's Krone Lamm Hotel before moving to Austria, where he worked at the Hilton Vienna Plaza. After relocating to Australia, he quickly established himself in the Australian dining scene, working at the prestigious Emirates Wolgan Valley Resort & Spa, and triple-hatted Sepia Restaurant.

Chef Hartert is passionate about working with regional farmers and producers, and believes in letting the best seasonal and sustainably sourced ingredients speak for themselves.

“Just as the Porter House Hotel combines a modern wing and heritage building, our food will showcase tradition with a modern twist, while taking our guests on a journey,” said Chef Hartert. “I am so excited to work in this beautiful hotel, which will inspire myself and the team to design flavour-driven menus that are worthy of this iconic location.”

Commissioned in 1876 by philanthropist and horticulturist, Hugh Dixson, the hotel started its life as a grand tobacco factory and was later a furniture and leather merchants. It provides the perfect venue for every occasion, from a casual breakfast or lunch in Henry's Bread and Wine; to a delicious dinner at Dixson & Sons; to innovative cocktails inspired by exotic spices at Spice Traders. The hotel features five floors dedicated to dining, drinking and events, all located within the historic wing of the building, where leather, pressed tin, brass fixtures, and glass displays of archaeological treasures all speak to the building's rich history. Today, the Porter House Sydney continues its historical association with quality artisanship, which will be evident in the restaurant's new menus.
