Coral Reef Club Partners With Hide's Ollie Dabbous for Guest Chef Residency

Between the 19th - 23th October, Dabbous will collaborate with Coral Reef Club's acclaimed kitchen for his first international guest chef residency. Coral Reef Club's owners - the O'Hara family - first met Dabbous when they dined in his restaurant many years ago with a mutual friend and a friendship quickly followed. 

Coral Reef Club's restaurant offers oceanfront dining at its finest, with soaring views of the calm Caribbean Sea, and a daily changing menu of seafood and traditional cuisine. During the residency, Dabbous will design and spearhead a seasonal menu inspired by the tropical location and local produce. Guests can expect all of the refined finesse from one of the UK's greatest chefs, yet with a more casual Caribbean island twist. Menu highlights include grilled lobster with warm spices, served with cauliflower couscous and broth made from the shell; roast scallop with fenugreek butter, coriander leaf and pistachio as well as glazed chicken with black treacle, allspice and mustard. Dabbous' version on a Barbadian dessert is also guaranteed to be a hit: a coconut sundae with hot smoked caramel and rum. 

Commenting on his upcoming residency, Dabbous enthuses: “My menu will focus on food that guests want to eat when on holiday and in warmer climates. The dishes will be simple, delicious, vibrant and healthy. I am always excited to discover new ingredients and cooking techniques and I am looking forward to seeing what Barbados has to offer. It is a privilege to showcase my food in a completely different part of the world to Mayfair and be part of Coral Reef Club's iconic hospitality team”.

The O'Hara family are excited to be welcoming Ollie.  Mark O'Hara is confident that Coral Reef Club's guests will be delighted by his food and the team are also very much looking forward to the experience: “It's a great opportunity for our chefs to be exposed to new ideas and to learn from Ollie's talent and I'm sure Ollie will enjoy his island experience.”.

Dabbous' residency comes at an exciting time for Coral Reef Club. In October, the historic family-owned hotel will unveil their upgraded Luxury Cottages, pool area, and Coral Terrace where the much loved Thursday night barbeques are accompanied by a live steel band. Additionally, this year, the famed hotel has further elevated its already prestigious wellness offering. October will mark the opening of its upgraded gym and tennis courts, as well as menus offering a higher nutritional value, alongside creative vegetarian and vegan dishes.
