Culinary experiences including award-winning rustic Roman Italian in Garum are at the heart of The Westin Perth. This Osteria is a favourite for Western Australian locals, interstate, and international guests alike. Inspired by the beauty of historical Hibernian Hall with soaring ceilings and high, arched windows, it sets a chic scene for an outstanding Italian meal. Garum is a collaboration between The Westin Perth and acclaimed chef Guy Grossi. Genuine hospitality and sustainable quality produce is at the forefront of the core values of the venue.
Garum's atmospheric Hibernian Hall location provides yet another relaxing environment for guests to leave feeling well-nourished. The menu comprises ancient and modern Roman Italian dishes with Western Australian produce. Signature menu items include Polpo di Gaeta octopus, Stagionato cured kingfish, Pesce local fish and Agnello Arkady lamb shoulder.
The wine list is based around the drinking culture of Ancient Rome. Throughout the list, the region of Lazio is highlighted such as with Grossi Prosecco by Canella, whilst supporting the great diversity of producers in Western Australia including Voyager Estate. Following a practice developed by the Romans, wines are categorised by colour and then by grape varietal forming a simplistic drinking guide.
Garum is open for breakfast seven days a week with the Roman breakfast table, a unique buffet-style breakfast with Italian delicacies. Aperitivo service (Italian happy hour inclusive of reduced-price beverages and bar snacks) is offered pre-dinner or for post work drinks. Dinner is available Tuesday to Saturday. Private dining in the Polpo private dining room is also available to guests. Garum's name originates from Garum, a Roman fish sauce made by salting and fermenting fish in small clay jugs or vessels, commonly used throughout ancient Roman cooking.
