With a deep history and harbour roots, from inception the 272-seated Sailmaker Restaurant has been inspired by its nautical surrounds. Previously known for their Signature Seafood Table, the new concept elevates the former seafood buffet offering, transforming into a three-course Choice Menu with produce exclusively sourced from sustainable fisheries that practice eco-friendly farming or wild caught produce with MSC certification.
A continuation of Hyatt's food philosophy of 'Food. Thoughtfully Sourced. Carefully Served,' working with sustainable suppliers has been the core mission for Chef de Cuisine, Simranjit Gill and Pastry Chef, Prashant Anand when designing the menu.
From ocean to plate, Seafarer Dinner is available every Thursday, Friday, Saturday and Sunday evening from 6pm to 9:30pm, guests can indulge in the Choice menu (tapas table and three-course dinner) for $74pp.
“Produce is sourced far and wide to ensure each dish is not only delicious, but sustainable. Our octopus is from Fremantle Octopus, West Australia; a sustainably, wild-caught octopus that dines on lobster, abalone and scallops. On arrival, guests are invited to gather at the Mediterranean tapas table filled with breads, grilled artichoke, stuffed peppadew, smoked mozzarella, cured olives, dips and more, designed to be shared family style.
As part of the experience, guests can choose from a selection of five entrées and five mains - from the freshest Fremantle octopus, Skull Island prawns, glazed mulloway, Aquna Murray Cod and more, accompanied by the finest Australian ingredients and paired with a premium selection of Australian and New Zealand wines. To finish the evening, a sweet trolley will see mouth-watering desserts prepared and served table side – from deconstructed classics like Twisted Pavlova to enchanting flavours like Broken Glass Cake.
Whilst heavily inspired by the ocean, there will be vegetarian, vegan and meat options for those not looking for pesca dining.
