Sofitel Sydney Darling Harbour Announces 'Month of Chocolat' Gastronomy Package

Much like the Sofitel brand, a renowned ambassador of lively food and beverage, Sofitel Sydney Darling Harbour has chosen to incorporate the world's finest chocolate brand Valrhona amongst its offering. “Valrhona has been producing the finest French chocolate in the small village of Tain L'Hermitage, France since 1922. For almost a century, Valrhona has created a range of unique and recognisable aromatic profiles by perfecting techniques. This not only enhances the flavour of rare cocoa brands grown on land, but also ensures that our guests or discerning gourmets can rely on Valrhona's expertise to experience the best that chocolate can be in each serving or offering. Adding in the fine touches of Valrhona chocolate provides our guests and Sydneysiders with the opportunity to experience unique French-inspired experiences” – said Executive Chef, Eric Costille. 

 

The Month of Chocolat experience starts in Champagne Bar, where Bars Manager, Jarod has created a tantalising Chilli-Chocolat Manhattan. The name does speak for the key ingredients with the limited edition concoction featuring touches of chilli and Valrhona Chocolat. From here, guests will give into the irresistible aromas and flavours of the hotel's quintessential three-course Chocolat menu in Atelier by Sofitel.

Sofitel Sydney Darling Harbour's team of craftsmen bring the authentic taste of Valrhona chocolate to life in a sensory gourmet dining experience. To start, guests will enjoy fresh Yamba Prawn & Scallops Carpaccio, with a delightful combination of Manjari 62% cacao balsamic glaze, orange segments and Thai basil. Guests are then served the delightful Farm Duck Breast combining Kalingo 65% raspberry port sauce, soft polenta, Cara and melized yellow endive. And to finish, guests savour the hazelnut-filled Chocolate Bar, which includes Satilia 62% chocolate and mascarpone.

Valrhona is committed to promoting gastronomy-based experiences and is proud that all of its products are eco-designed - they had a 20% reduction in water usage between 2013 and 2015, 7% reduction in energy consumption since 2014 and are also working in partnership with the Foundation Terra Isara and scientists at CIRAD on “Cacao Forest”, an agroforestry project that is taking place over the next 5-6 years.
