Marc Fosh, one of the island's veteran Michelin star chefs who first received a Michelin star 18 years ago, comments on the island's changing gastronomy scene; “When I first won a Michelin star in 2002 I was one of several foreign chefs on the island with this award, now local Mallorcan chefs are really coming to the fore bringing their own island flair and producing amazing food with local produce”.
