Situated in a beautifully remote part of the distant Raa Atoll in the Maldives, the striking small coral island of Faarufushi offers the perfect combination of romance, beauty, style and luxury. A five-star resort, and a Small Luxury Hotel of the World, the culinary delights at Faarufushi play a huge roll in this island experience.
With three restaurants and two bars, each dining venue at Faarufushi has been curated with its own focus and emphasis on the highest quality ingredients. Iru, located next to Sangu Bar, overlooks the resort's infinity pool, with sweeping views of the beach and the sea beyond. All-Day Dining spans an expansive Breakfast buffet alongside traditional European, regional and exotic a la carte breakfast options. Lunch and Dinner choices include light, fresh meals and salads or for something a little more substantial, beautifully spiced curries, freshly cooked fish and meat, seasonal pasta and pizzas are just some of the available options. Sangu Bar offers poolside, beachfront and bar service with an array of expertly crafted cocktails and mocktails, alongside imaginative snacks and sweet treats.
At the end of a winding jetty set out over the reef's edge is signature bar Boli and signature restaurant Eclipse; alfresco seating ensures a perfect sunset view at Boli throughout the year, complemented with the world's finest wines, hand-crafted cocktails and live music. The crescent-shaped Eclipse offers an immersive gourmet experience with a full panoramic view of the Maldivian seascape. Exciting dishes using the freshest ingredients create a fine-dining experience like no other, demonstrating the creativity of the extraordinary chef Mohamed Adil. Vibrant dishes range from braised Wagyu to grilled Maldivian fish to name but a few.
An award-winning Maldivian chef, Adil started his career in 2011 rising through several 5* resort restaurants. He joined Faarufushi's pre-opening team in 2018 as Junior Sous Chef in-charge of opening Athiri restaurant; in 2019 Adil was promoted to Sous Chef and has been in-charge of Eclipse since. The menu at laid-back beachside restaurant Athiri sings with Adil's vibrant creations; salad bowls, a tapas and ceviche counter, teppanyaki and robata, bagels and paninis and wood-fired pizzas are all available here.
Adil has shared three recipes: Maldivian Octopus, Pumpkin Chutney and Coconut Flat Bread, Baked Reef Fish, and Reef Fish Ceviche so that you can enjoy a taste of Faarufushi at home!
