Kapuhala is thrilled to debut a new restaurant identity: Halapua, located within the soon to open Kapuhala Koh Samui Tropical Farm and Training Retreat in Thailand. Halapua is the first high-end plant-based restaurant of its kind in Koh Samui, part of the global Kapuhala lifestyle brand, with sister locations in Hong Kong and Sicily, Italy.

An authentically gourmet dining experience, Halapua showcases the finest plant-based menu with dishes incorporating seasonal produce sourced from the on-site natural farm when possible, as well as buying freshest fruit and vegetables directly from local Thai suppliers who are passionate to share the flavours of the land.

Chef's personal interpretation of contemporary plant-based cuisine integrates modern international fusion of Classic French cooking and modernist cuisine techniques to create and reimagine classic dishes like gnocchi, foie gras, steak and potato as well as create new flavour combinations by utilising his extensive knowledge and experience he accrued through his extensive career traveling the world.

Located on the beautiful Thai island of Koh Samui, Halapua is immersed in the carefully preserved native lush tropical nature of Kapuhala Koh Samui Tropical Farm and Training Retreat where Tented Villa accommodation set to open December 2019. The retreat will offer fitness enthusiasts, race runners, corporate high-achievers and those looking to adopt a more eco-conscious approach to travel a holistic and life-enhancing travel experience via a combination of guest services that consider circadian rhythm, plant-based diet benefits, bio-hacking techniques and beyond.

Antoine Auray (Tito) Food and Beverage Manager and head Mixologist said, "We are delighted to bring the new restaurant, bar and lounge to Koh Samui's local community. The menu offers unique high-end plant-based dining, and it's the only one on the island of its kind. Our rooftop mixology lounge is affectionately viewed as a vibrant mixology laboratory; where superfoods, herbs and nootropic-like ingredients are mixed for the ultimate experience harmoniously pleasuring the palate, body and mind all at once. We are all about inclusivity, offering mocktails and lower alcohol volume cocktails so there's something for all guests to enjoy”.

About Gregory Hill

Executive Chef

With over 14 years' experience, Executive Chef Gregory Hill is determined to demystify the notion that plant-based food is tasteless and boring. A top graduate from the prestigious Le Cordon Bleu Culinary Institute, Chef Gregory has travelled the world cooking in Mexico, Indonesia, China and Thailand, where he now calls home. He has also worked as a private chef for the rich and famous including Billionaire Mr. Charles Stevenson and multi-millionaire Judy Whitmyre in Sun Valley, Idaho.

 

Chef Gregory knows that ingenuity is key to the culinary game, and became curious about plant-based lifestyle when he learned a lot of illnesses are food related. He believes food is pleasure, but pleasure doesn't have to result in poor health. Upon further research on the effects of a plant-based lifestyle, he became passionate to translate this knowledge to the plate. Chef Gregory took his years of experience acquired from traveling the world and eating exotic fruits and vegetables to become a top leading plant-based chef offering exquisite alternatives to the mainstream food industry.

 

About Antoine Auray (Tito)

Resident Mixologist | Food and Beverage Manager

Born in South Korea and raised in France, 'Tito' has acquired a wealth of knowledge with more than 21 years' experience in the hospitality industry. Antoine has worked in Michelin star establishments and launched bars around the world; with his creativity and showmanship a true testament to his passion for Mixology and guest experience.

Intrigued by Halapua's plant-based mission, 'Tito' created a bespoke cocktail menu with signature creations masterfully crafted using the finest spirits from around the world, freshest juices and herbs sourced on-site from the resort farm and finished with Tito's own hand-crafted bitters.
