Harbourside, InterContinental Hong Kong's popular all-day restaurant, continues its “Taste of Asia” promotion with the Harbourside Weekday Lunch Buffet, paying tribute (every two months) to the culinary specialities from a different country in the region with authentic dishes from each country –including Malaysia, Singapore, Thailand, India, Taiwan and Vietnam.
From July 1 – August 30 at the Weekday Lunch Buffet, Chef Nicholas Chan presents “A Taste of India” with an array of flavourful dishes from the “Land of Spices”, including a selection of tandoori and curry dishes, chaat, dosa and much more.
Indian cuisine, which has a long history dating back over 8,000 years ago, is extremely diverse as a result of the many races and religions, as well as empires over its rich history from the Tomars and Rajputs to the Mughals and British.
Some of Chef Nicholas Chan's Indian specialties include:
Tandoori Prawns with Sweet Corn Salad
While the centuries old tandoori style dishes are usually served with meat, Chef Nicholas has chosen prawns for this flavourful and refreshing Indian appetiser.
Aloo Chaat Salad with Quail Eggs
The origin of street food in India is linked to the many households which didn't have kitchens, with people seeking simple local food outside the home. Aloo chaat is one of the most popular street dishes, as fried potatoes are simple to make and stall owners can be creative with its other ingredients. Chef Nicholas and his team have come up with their own interpretation of aloo chaat.
Kashmiri Pulao
As its name indicates, this dish originated in the Kashmir region where the locals craved a hearty dish with meat. Kashmiri Puluo traditionally uses mutton stock and spices, along with rice cooked in milk with dry fruit and nuts. Saffron is added to give it a nice fragrance.
Achari Tandoori Ling Fish
Another must-try Indian dish is definitely tandoori. Each part of India has its own way of preparing it. Chef Nicholas is grilling ling fish Achari style. This North Indian dish is made with grilled fish fillets, pickled chilies and yogurt for a spicy & tangy flavour.
Malabar Prawn Curry
No Indian meal is complete without curry, one of the staples of Indian cuisine. While there are many varieties, Malabar curry is most popular with seafood and fish. Chef Nicholas uses fresh prawns with mustard seeds, chili and tomato to create a curry that's spicy, hot and sour, as well as sweet and tangy.
Dosa with Sambar and a selection of Chutney (Coconut, Tomato, Mint and Mango) and Masala (Potato and Spinach)
Originating in South India, dosa, which is somewhat similar to crepes, is made with rice batter. Now popular across India, it is usually served with a variety of condiments. Watch our chefs in action as they prepare freshly made dosa, served with sambar and a choice of chutney and masala.
