This summer quench your thirst in InterContinental Hong Kong's Lobby Lounge over innovative cocktails made with Plantation Rum, an artisanal range of rums from the great terroirs of the tropics.
The hotel's Resident Mixologist Sabrina Cantini-Budden will delight you with her creative cocktails made with unique spirits she's sourced from around the world. In our continuing cocktail series showcasing unique spirits from artisanal distilleries from around the world, Sabrina has selected artisanal Plantation Rum for her innovative cocktails.
About Plantation Rum
The first trace of rum distillation dates back to 1651 in Barbados. More than four centuries later Plantation strives to perfect the long-held traditions of the process and rum-making culture. Its rum is aged in bourbon casks in a tropical climate. Each rum-producing country has its own unique terroir (local habitat) forged with traditions, proven techniques, character, and identity.
The range of Plantation Rum honours the softness of Barbados, Guyana and Jamaica, evoking the great epic of exotic and adventurous maritime commerce that ruled the day. Founder Alexandre Gabriel shares, “I love authentic products that express the personality of the land that grew them.”
To create its artisanal rums. Plantation starts with the unique scents & palettes of the Caribbean, then a double ageing method (in the Caribbean and France with two climates and types of oak) and French finesse.
For the Plantation Rum cocktails, Sabrina has selected:
STIGGINS' FANCY PLANTATION PINEAPPLE
This is a tribute to the character created by Charles Dickens in the Pickwick Papers, Reverend Stiggins, whose favorite drink was “pineapple rum.” The barks of Victoria pineapples are infused in Plantation 3 Stars rum, which is then further distilled. Separately, the pineapple fruit is infused in Plantation Original Dark rum. Both distillate and fruit infusion are finally blended together, creating a rich and delicious pineapple bouquet, accented by smoky and clove notes.
PLANTATION ORIGINAL DARK
This has the rich and intense style of Jamaica and Barbados, with their notes of plum, banana and vanilla. It is enhanced by meticulous blending and further maturation in France The result is a profound structure spiced with notes of cinnamon and clove, whose smoky quality adds texture.
PLANTATION BARBADOS 5 YEARS
American oak barrels play host to this rum where it ages for three to four years. Next a woody and nutmeg palette is drawn out in Ferrand French oak casks as the rum continues to mature for one to two years. The result is a subtle and tropical Barbadian style rum, excellent for aperitifs or classic cocktails like the Mai Tai.
PLANTATION PANAMA 2004
Distilled in a four column still in 2004 at the Alcoholes Del Istmo Distillery, this rum is first aged in Panama for eleven years, giving it violet scents with structure and depth. It is then raised an additional two years in Ferrand casks in France, which lend spicy and woody notes that infuse slightly tannic undertones.
BARBADOS 2001
The 2001 Barbados Rum is first aged in bourbon and sherry casks for nine years, before further finished in cognac casks for another three years. It has lots of spice and fruit, with distinctive pineapple notes coming through on the nose.

Plantation Barbados Aged 5 years, whisky liqueur, peach puree, pineapple juice and angostura bitters

Plantation Rum Barbados 2001, coffee liqueur, whisky liqueur, espresso and cream
