International Chef Boris Buono announces new dates of IBIZA Cookery Courses & Retreats

Leading Ibiza Chef Boris Buono has just announced dates for some exciting new one-day cookery courses at La Finca in Ibiza.  The first will be held on 5th September and second on 3rd September 2018.

Boris Buono is founder of Taller De Tapas and the Social Dining Clubs at The Ibiza Food Studio are two gastronomic experiences in Ibiza that will take you on an unforgettable journey of authentic culinary discovery.  The principle behind the Ibiza Food Studio is about connecting people over a shared love of locally sourced, seasonal food that is prepared, cooked and served as close to nature as it can be. 

The concept of both places is 'social dining'. The seeds of the food studio were sown in a small apartment in Copenhagen where friends came together to eat, laugh, talk and share ideas over plates of delicious food.

Both restaurants are spearheaded by Boris Buono, food-pioneer and international Chef, whose restaurant credentials include the running of some of the world's finest kitchens, counting Denmark's Michelin starred Noma (named the world's best restaurant) amongst them. 

Boris is currently making waves as a game-changer on the European restaurant circuit in Ibiza by pushing the boundaries and shaking up the traditional restaurant scene.  Boris and his partner Vanessa (born in Seville to a restaurant owning family) work closely together to look after their guests. Boris says 'I am the architect and Vanessa is the female energy of the house, she naturally brings everyone together around our table'.

Boris says 'The food philosophy of Noma is incorporated in our cooking – we use  local ingredients and forage wherever possible. For me a locally caught fish is as luxurious as caviar –  it's about taking raw material and upgrading it by conceptualising. By combining the elements and philosophy of new Nordic cuisine and giving it a Mediterranean twist, our concept introduces what I like to call 'New Ibizencan' cooking to the Island. I use traditional and classic ingredients, methods and cultures.  Ibiza is a very spiritual place – people are drawn to the island from all over the world. There are a wealth of world cuisines here - and sometimes Ibiza feels more global even than Copenhagan!'

Taller De Tapas is tucked away in a maze of cobbled streets in the fisherman's quarter of the Old Marina by Dalt Villa. The restaurant offers a relaxed and informal dining experience. Inside the ancient stone building a spiral staircase links the upper and lower floors and a wealth of sabina wooden beams give the place a rustic but welcoming feel. The menu includes tapas style meat and seafood dishes or a la carte, which are paired with the best ecological and biodynamic, natural, organic wines from Catalonia, all handpicked by Boris.

The Ibiza Food Studio La Finca is a beautiful ancient farmhouse set deep in the Ibizan countryside, with incredible views that stretch over to Benirras beach. The house is surrounded by terraced gardens where Boris and Vanessa live and grow their own organic herbs and spices and collect eggs from free-range chickens. Inside the ambience is of laid-back old-school Balearic style, decorated with sheepskins, candlesticks and centred around a huge rustic table.

Boris is passionate about working closely with the community around him, from producers, farmers, soil associations to schools, educating people in the benefits of farming and creating beautiful meals -showing them how traditional artisanal skills translate in the 21st Century. 

With Taller De Tapas and the Social Dining Clubs at the Ibiza Food Studio now firmly established as 'the' go-to dining experiences in Ibiza, 2018 sees Boris and his team take their food concept to a whole new level with the introduction of residential cookery courses, retreats and workshops  at La Finca in Ibiza. The courses will be one-day workshops for people cooking at home who want to fine-tune their skills to residential master classes for top chefs during the winter months.

At one of Boris and Vanessa's Social Dining Clubs, you can choose from a full tasting menu with small starter dishes such as Cerviche, Gazpacho, grilled Gambas, Cepias or Lobster in season.  Fish of the Day could be Sea Bass, Bonita, Mackerel or Amberjacks,  (caught by Boris)  often baked in Ibizan salt, or you can try a clam and seaweed salad prepared using mineral-rich sea water. On the grill are bigger cuts of organic lamb, rabbit, chicken or pork or for family lunches wood fired ovens make delicious pizzas - inspired by Boris's Neapolitan background.  For the full social dining experience book a seat at Boris's table and experience an 8 course elaborate dinner paired with the best of local and Catalonian wines.  

Boris' Social Dining Club is the ultimate in culinary creation. Dinner starts in the garden around the pool and then moves up nearer house as the courses change. The whole experience is interactive - guests can pop into the kitchen or harvest something from the vegetable garden.  The menu is bespoke and tailored according to the occasion or the season. The whole experience, often accompanied by live music, is magical and atmospheric.

Boris Buono, born in Copenhagen to a Danish mother and Italian father, developed his deep appreciation for quality food from a young age. Growing up in the Danish countryside he spent every summer with his family sailing across the Scandinavian waters, fishing on the open sea and cooking the catch of the day. He is a forager and collects and catches sea snails, sea urchins and mussels on the rocks around Ibiza.

His team includes his wife Vanessa, who runs both their restaurants.  Boris trained to be a Chef at Formel B in Denmark for four years and went on to run the prestigious kitchen of Noma in Copenhagen. He also founded and ran 'Botega' two Southern Italian-style restaurants in Denmark before moving to Ibiza in 2014.  He now lives in La Finca with Vanessa.
