Award winning Chewton Glen Executive Chef will take over The Rib Room Bar & Restaurant for one week in October

Executive Chef Luke Matthews and Simon Young will join forces to create a pop-up dining experience from 08 – 14 October at The Rib Room Bar & Restaurant in London

 London. 09 August 2018 – This October, Chewton Glen, a five star country house hotel and spa based in the New Forest, will be gracing Jumeirah Carlton Tower's Rib Room restaurant to bring guests a unique countryside culinary experience in London's Knightsbridge.

The Rib Room Bar & Restaurant at Jumeirah Carlton Tower will be hosting Chewton Glen's Executive Head Chef Luke Matthews for 7 days for a full takeover of the restaurant. During this time, Luke will work with the Executive Head Chef of Jumeirah Carlton Tower, Simon Young, to transform the restaurant's à la carte menu into a replica of some of the dishes at The Dining Room (at Chewton Glen). Alongside the extensive Chewton Glen à la carte menu, guests will still be able to enjoy The Rib Room's signature dishes such as the rib of beef and Dover sole. Luke will be personally managing the running of the restaurant during the pop-up, and training The Rib Room kitchen team to re-create the selected dishes from The Dining Room's eclectic menu.

The Dining Room prides itself on its locally sourced regional ingredients, with much of the produce grown just yards away in the hotel's own walled kitchen garden and nursery. These fresh ingredients will be transported to The Rib Room for the week, to ensure optimum authenticity of the dishes.  Chewton Glen is no stranger to unique culinary experiences, being home to The Kitchen; an informal restaurant which allows guests to watch top chefs at work and is home to The Kitchen Cookery School headed up by celebrity chef and Chewton Glen alumni James Martin. Luke and James have worked together a great deal and are good friends; to this day they continue to work on a number of culinary projects and owing to this friendship, Luke has appeared on James Martin's Saturday Morning cookery show.

Nestled on the fringe of the New Forest and within walking distance to the sea, Chewton Glen is an idyllic retreat with a sparkling history dating back to the early eighteenth century. From the typically English to the totally cosmopolitan, Executive Head Chef Luke Matthews and his talented brigade create fine dining at its best at The Dining Room restaurant. Thanks to his 25 years of service at Chewton Glen, Luke Matthews has injected his personality and flair into The Dining Room's menu, with signature dishes such as the Emmental Soufflé and Thai Lobster Curry.
