Sublimotion, Ibiza's first gastronomic performance located at Hard Rock Hotel Ibiza, is getting its fifth season underway with the addition of the US TV chef, and holder of two Michelin stars, David Chang.
For 2018, Sublimotion chef Paco Roncero has invited Chang, of Korean origin, to form part of the Sublimotion team to create a dish based on a reinterpretation of Japanese cuisine.
David Chang joins a cast of chefs formed by Paco Roncero, Dani García, Diego Guerrero, Toño Pérez and pastry chef Paco Torreblanca, creating a team which collectively has 10 Michelin stars, bringing together their unique culinary skills to offer an unprecedented gastronomic performance.
The fifth season also includes the collaboration with in-house chef at Dom Pérignon, Marco Fadiga. The Italian chef has created a new dish for the Sublimotion 2018 season, which will be served to diners to introduce them to the world of the exclusive Champagne Dom Pérignon Second Plénitude (P2).
The collaboration between Sublimotion and Dom Pérignon reaches new levels this season, and from June 2018 onwards the gastronomic performance will introduce diners to the P2 Embassy. Since its creation, Dom Pérignon has pursued a clear ideology; to be governed by a firm commitment to exclusive vintage wines. The prodigious Maison-chef showcases the purest essence of the brand which throughout the years has meticulously fine-tuned its product, by taking risks and spearheading unique contemporary styles.
During the 2018 season, the contribution of Chang and Dom Pérignon elevates Sublimotion and supports Paco Roncero's quest to continue to evolve the gastronomic show to provide a new and cutting-edge experience for guests.
The 2018 show pays homage to the Second Plénitude of Dom Pérignon; a result of a sixteen-year production process, resulting in an intense, vibrant and delicate wine bursting with energy. Every bottle is a fine-tuned creation, with the brand also curating experiences that surpass the concept of luxury and blend gastronomy with delicate wines and carefully-designed moments.
On a more technical level, this season of Sublimotion introduces a new set that brings a whole host of new technological developments and marks an evolution of the experience since its launch in 2014. The kitchen staff and chefs, design and engineering teams have worked together meticulously to create a new set where thanks to "Hybrid Reality" will immerse 12 diners per seating in a completely virtual environment, where they can interact and taste haute-cuisine in a new and inimitable way.
Described as an experience which feels like “sitting down to eat inside a video game”, diners will observe culinary creations flying around them, and can reach out and taste them, showcasing a clever convergence of VR with real life.
This development made possible by a team of developers at Sublimotion enables the diners to imagine how soon it will be possible to sit down and eat with someone at the same table in a location of their choice, even if they are located in different cities and separated by thousands of kilometres.
For the 2018 season, Sublimotion also welcomes Spanish actress Iris Lezcano, who will be the new master of ceremonies and responsible for conducting the gastronomic performance.
Lezcano joins an artistic team formed by Alfonso G. Aguilar who will remain in charge of musical direction, Juan Calos Paz “BAKEA” acting as illustrator, Roberto Diz, responsible for costume design; the illusionist Jorge Blass, head of stage innovation, and the DJ and musical producer Wally López who for the third consecutive year will bring the essence of Ibiza's nightlife to a gastronomic performance.
