InterContinental Hong Kong's newest restaurant, Rech by Alain Ducasse, the first international outpost of Paris's most famous seafood restaurant, offers an authentically French seafood experience. There is no better place to celebrate Le French GourMay. Savour Fresh Gratinated Oysters with Champagne (3 pieces for HK$300). (Executive Chef Stéphane Gortina is preparing the French Gillardeau oysters with sautéed spinach, reduced cream and sabayon made with Alain Ducasse Champagne).

Rech Executive Chef Stéphane Gortina has created a 5-course set menu or HK$1,300 per person, with a wine pairing option for an additional HK$988 per person. The menu features a Gratinated Oyster with Champagne, White Asparagus-Crayfish-Morels, Roasted Free Range Chicken with carrots from Chalons-capers-parsley, Chaource with mixed-salad-vinegar from Reims, and for dessert, Mrs. Rech: Raspberry-Rosé Champagne.

Rech by Alain Ducasse is partnering with the exclusive Champagne House – LOUIS ROEDERER for a special Champagne Dinner on Tuesday, May 16th (showcasing the 5-course Le French GourMay menu at HK$1.300 per person with a Louis Roederer Champagne pairing showcasing six vintages, including Cristal 2009) for an additional HK$988 per person.

About Champagne LOUIS ROEDERER
Established in 1776, the Champagne House passed through several owners before Louis Roederer inherited it in 1833 and gave it his own name. Combining his refined sensitivity toward the beauties of art and nature and his entrepreneurial expertise, the heir took a visionary approach to enriching his vines, aiming to master every stage of the wine's creation. He forged the wine's unique style, character, and taste. In the mid-nineteenth century, Louis Roederer acquired some of Champagne's Grand Cru vineyards — an approach that contrasted sharply with contemporary practices. He nurtured his vineyards, familiarised himself with the specific characteristics of each parcel, and methodically acquired the finest land. Louis Roederer's guiding principle was that all great wine depends on the quality of the soil, a passion for tradition, and an astute vision of the future. Under his visionary leadership the fame and reputation of the House of Louis Roederer was firmly established.
About LOUIS ROEDERER CRISTAL
In 1876, Tsar Alexander II of Russia sent his cellar master to Reims with a special request: the emperor asked Louis Roederer to develop an exclusive cuvée for him—exceptional Champagne in a splendid bottle. Louis Roederer selected the best parcels in his vineyard, containing old vines growing in calcareous soil, and created a flat-bottomed, transparent lead-crystal bottle. The Tsar was concerned about the possibility of assassination attempts, so it was important that no bomb could be hidden under the bottle. His grandson Nicolas II paid homage to the House in 1908 by appointing it 'Official Supplier to the Court of His Majesty the Emperor of Russia'. The first ever prestigious cuvée, Cristal has always been present on the dinner tables of those who know how to live like kings.
Cristal is still being produced from Louis Roederer's exclusive old vines, located in the Grand Cru vineyard. Most of them are cultivated according to biodynamic principles and vinified parcel by parcel in order to ensure that the wine expresses all the complexities of its terroir.
Champagne Master Classes
In May, join InterContinental Hong Kong's Sommelier team for a series of Champagne Master Classes to celebrate Le French GourMay Festival 2017, which pays tribute to the Champagne region.
Our Assistant Director of Food & Beverage Mathieu Ginglardi, Chief Sommelier Andy Au and Rech by Alain Ducasse Head Sommelier Romain Loriot and will share their expertise on Champagne. Learn how to identify the characteristics of Champagne, plus recommendations for food pairing.
The classes each include eight premium Champagnes paired with canapés at Rech on May 6 and 20 for HK$1,288 per person and a 4-course dinner at Yan Toh Heen on May 13 for HK$1,688 per person. (Minimum class size is eight persons.)
