Luxury Family Hotels announces the appointment of Stuart Shaw as Head Chef at the three-red-AA-star Thornbury Castle. The castle has a long-standing reputation for fine dining and is one of the few Tudor castles open as a hotel in England.

Stuart, 34, has gained his experience at several award-winning restaurants including the two Michelin star restaurant Le Manoir Aux Quat' Saisons where he worked with Raymond Blanc, the Manor House, Castle Coombe and Northcote Manor, which have both been awarded five red stars and a Michelin star .

With a modern British style, focussing on the very best ingredients of the area whilst they are at their very best, Stuart's signature dishes include Chicken and Foie Gras Terrine with Rhubarb and Celeriac, Duo of Beef Shin and Fillet with truffle mash, spinach puree and red wine jus, as well as a classic Chocolate Fondant with cherry compote and pistachio ice cream and Treacle Tart with clotted cream ice cream.

Food is a highlight of any stay at Thornbury Castle, from the delicious breakfasts featuring everything from fresh pastries, fruit and yoghurts to a full English breakfast with locally sourced sausages and bacon, to lunches, afternoon tea and very special dinners.  

For adventurous diners looking for a very special and intimate experience, Thornbury Castle offers dungeon dining – a four course bespoke dinner menu with canapés[1] designed and cooked by Stuart. The dungeon is also home to the hotel's bonded wine cellar with its award-winning collection of bottles from some of the world's best artisan wine-makers and estates. To accompany a menu of sensational dishes, the talented sommelier will recommend wines to suit every palate and pocket.

The restaurant at Thornbury Castle currently has two AA rosettes. It is renowned as one of only 23 outlets in England to receive a Michelin star in the first Michelin Guide to Great Britain in 1974, when the restaurant was under the tenure of Kenneth Bell.
