From March 23 – April 30, enjoy “A Taste of the Mediterranean, Cantonese Style” at InterContinental Hong Kong's 1-MICHELIN Star, Forbes Travel Guide Five-Star Yan Toh Heen with a selection of exquisite Cantonese dishes by Executive Chef Lau Yiu Fai, inspired by the finest ingredients sourced from the Mediterranean.

Featuring Carabinero, Sea Bass, Pork and Iberico from Spain, as well as Duck Liver and “Bûche de chèvre” Cheese from France, Chef Lau's refined dishes showcase his culinary finesse and a modern Cantonese adaption of culinary treasures from the Mediterranean Sea, Southern Spain and the French Riviera.

On the à la carte menu, highlighted selections include:

  • Crispy Spanish Carabinero and Sakura Shrimp with Turnip in Puff Pastry
    Chef Lau loves cooking with Spanish Carabinero, a large deep-sea prawn from the Eastern Atlantic and Mediterranean Sea, known for its distinct taste and robust flavour. For this dim sum creation, he pairs the Carabinero with tiny Sakura dried shrimp which are lighter and more delicate than Chinese dried shrimp.
  • Golden Queen Crab Claw from with Minced Thai Crystal Shrimp and “Bûche de chèvre”
    Crispy on the outside, this dish combines minced shrimp with exquisite soft-ripened French cheese made from goat's milk, with a tender centre of firm and sweet crab claw meat.
  • Baked Spanish Sea Bass with Bean Sauce 
    One of the most versatile fish for various cooking styles, Spanish Sea Bass is ideal for both grilling or baking. Its white flesh is sweet with a mild flavour, even with minimal seasoning. Chef Lau marinates the Sea Bass with traditional Cantonese bean sauce before baking it. The result is a juicy, tender Cantonese style fish.
