World Famous Chef Nobu Matsuhisa Celebrates NOBU InterContinental Hong Kong's 8th Anniversary with his Culinary Friends (November 21 & 22)

World famous Chef Nobu Matsuhisa will be back in Hong Kong on Friday, November 21 and Saturday, November 22 to celebrate NOBU InterContinental Hong Kong's 8th Anniversary. On this visit, he will joined by two of his culinary friends from Japan –  Toshi Yoroizuka, one of Japan's most famous pastry chefs and owner of three dessert restaurants in Tokyo and also Yuji Aruga, the Owner & CEO of Katsunuma Jozo Winery, known for its wines made with Koshu grapes.

 

Nobu-san has collaborated with Guest Pastry Chef Yoroizuka, Winemaker Aruga, NOBU InterContinental Hong Kong Executive Chef Oyvind Naesheim and Executive Sushi Chef Hideki Endo to create an 8-course NOBU 8th Anniversary Omakase Menu at HK$ 1,088 per person with a wine pairing option at an additional HK$450 per person. (Please add 10% service charge to all prices).

 

Mr. Aruga will showcase three of his wines which are made with Koshu grapes from vines that have been cultivated in the Katsunuma region of Japan for over 1,200 years.

 

Guests will have a chance to enjoy two Katsunuma Jozo Chardonnays:

  • Koshu, Pipa. Arguga Branca, 2010 and
  • Koshu, Nobu Private Label 2010 and

      Plus one dessert wine – Koshu, Doce, Arguga Branca 2008.

 

The wine pairing Omakase dinner also includes Nobu-san's “Matsuhisa Private Selection” with a 2013 Chardonnay & a 2010 Cabernet Sauvignon  - both from the Russian River Valley in California.

 

The 8-course dinner menu features:

  • KUE UMAMIJIME / amazu bell pepper caviar, koshu wine pickled kaki
  • AWABI, HINODE-TAMAGO / sakuramiso balsamic and SHIRAKO-SHUNGIKU TEMPURA / sweet apple soy
  • SUSHI ASSORTMENT
  • CRISPY KING CRAB / yuzu goma dressing and SEARED SCALLOP /white truffle, soba risotto 
  • GRILLED SA-ME KAREI /den miso
  • JAPANESE WAGYU BEEF /shiitake, sweet potato, teriyaki
  • HOT INANIWA UDON /sea cucumber, nameko mushrooms
  • CHEERY FLUTE / figs, cassis, chocolate created by guest pastry chef toshi yoroizuka

 

In addition to his “Cherry Flute” dessert (with figs, cassis and chocolate) which is one of the highlights of NOBU's 8th Anniversary Omakase Menu, Guest Pastry Chef Toshi Yoroizuku is also creating two mini-desserts which will be showcased on NOBU's new Afternoon T-Set (available on Saturdays and Sundays).

 

About Guest Pastry Chef Toshi Yoroizuku

One of Japan's most famous pastry chefs, Toshi Yoroizuku not only owns three dessert restaurants (under his name), he is also President of Atelier Sancerre (the owning company of his restaurants).  He is also a TV Celebrity Chef (having appeared on “Iron Chef” in 2013).  His experience includes working in the pastry kitchens in top restaurants in France, Belgium and Austria and heading the pastry kitchens at some of Japan's most famous hotels. His wife is popular Japanese actress Naomi Kawashima.

 

About Katsunuma Jozo Winery

Katsunuma, located close to the centre of the main island of Japan, is the centre of viniculture in Japan.  It is here that Koshu grapes have grown for more than 1,200 years. Katsunuma is in the Eastern part of Kofu Valley in Yamanashi Prefecture, which is a mountainous region with several rivers.  Katsunuma Winery cultivates grapes spanning 30 hectares with 70% of the entire harvest coming from the famous Koshu grapes. Established in 1937, Katsunuma Winery has been cultivating grapes and making wines for three generations.
