Running across Thursday 26 March to Saturday 28 March, the takeover will see chef and owner Spencer Patrick present produce-first dishes inspired by his current work at Harrisons, showcasing premium Australian ingredients through modern technique and a strong sense of place.
Guests can choose from two ways to experience the residency:
- Social Hour (4–6 pm): cocktails and Harrisons signature snacks
- Dinner (6–9 pm): a seasonal, four-course dinner experience led by Spencer Patrick
Diners are welcome to book either session, or enjoy both for the full Harrisons evening, all set against sweeping Docklands views.
“This residency is about sharing what we do at Harrisons in a different context,” said Patrick. “The menu reflects our current style, grounded, elegant, and driven by produce, while embracing the atmosphere of Sunset House and the energy of Melbourne.”
Open to the general public as well as hotel guests, the residency offers Melbourne diners a rare opportunity to experience Harrisons' Port Douglas philosophy without leaving the city.
