Moanalei Villas is proud to welcome internationally acclaimed Master chef and mentor Monica Galetti back to Samoa for a second round of intensive culinary training, joined this time by renowned restaurateur David Galetti, whose expertise in front-of-house leadership and guest experience brings a fresh and supportive approach to hospitality development.

This return visit places a strong emphasis on widening access and creating opportunity for individuals who may not otherwise have access to world-class hospitality mentorship.

While Moanalei Villas prepares for its 2026 grand opening, this training focuses on more than menu refinement and operational readiness. It is centred on investing in people, particularly emerging Samoan hospitality professionals who may not have the financial means or international exposure to train abroad.

Chef Galetti is leading hands-on kitchen workshops, mentoring culinary staff in technique, discipline, kitchen structure and leadership development. Her training emphasizes sustainable systems, pride in local ingredients and building confidence in young professionals seeking long-term careers in hospitality.

Complementing the culinary training, David Galetti is working closely with front-of-house teams, focusing on service culture, guest psychology, leadership presence and building confident hospitality professionals. His sessions explore the finer details of service — from anticipating guest needs to creating memorable dining experiences rooted in warmth, sincerity and professionalism.

Together, their approach reinforces that exceptional hospitality is not just about food, but about people, teamwork and consistent standards across every guest touchpoint.
