Singapore's latest food and drink additions span cave settings, destination dining and heritage flavours, creative dessert-led concepts and a strong wave of cocktail and whisky bars, alongside the return of a few much-loved favourites.

Cavern Restaurant
Opened March 2025
Located near the entrance to Rainforest Wild ASIA, Cavern Restaurant is Singapore's first and only restaurant in a cave setting inspired by the real-world Mulu Caves in Sarawak – one of the largest and most intricate cave systems in Southeast Asia and a UNESCO World Heritage Site.
Managed by the renowned TungLok Group, known for its award-winning establishments across Asia, it is helmed by Head Chef Sheng Lim, with a menu that is thoughtfully crafted, blending creativity with casual yet elevated fare, and a focus on hearty grilled meats, vibrant shared platters, and a tempting selection of signature cocktails and craft beverages.
Belimbing
Opened April 2025
Located on the second floor of a restored heritage shophouse on Beach Road is the latest concept from The Coconut Club's team: Belimbing.
Taking its name from a fruit commonly used in Peranakan cooking, local chef Marcus Leow reimagines familiar local flavours in unexpected and refined ways. Menu highlights include rojak featuring grilled firefly squid and the grilled short ribs, with a rich percik sauce.
Mondo
Opened July 2025
With gelato, boozy sorbets, coffee and cocktails on tap, Mondo is far from your typical ice cream parlour.
At any given time, 11 flavours are on offer, ranging from adventurous creations like blue cheese and candied pear, honey lavender, Shizuka matcha, and marsala-poached figs to timeless classics such as Sicilian pistachio and Valrhona 61% chocolate. Sorbet lovers can enjoy inventive options like lemon sake, cherry and tequila, passionfruit, and pineapple makgeolli.
Styled with deep-red leather couches, marble tabletops and gold accents, the retro-glam space seats up to 30 guests.
bar.ter

Inside a shophouse just off Boat Quay, this bottleshop has floor-to-ceiling shelves lined with rare and artisanal spirits, from fine bourbons and premium Scotch to unique small-batch discoveries. The team of seasoned experts ensure a welcoming, approachable experience, with many of their offerings available to taste before purchasing.
Bar.ter offers a unique cocktail menu including their own take on the classic Singapore Sling and if you find something that really tickles your fancy, you can purchase a bottle to take home with you!
Horatio
Opened August 2025
A whimsical, theatrical bar that is part speakeasy and part explorer's den, Horatio is located within Resorts World Sentosa and its whisky-forward menu – Trails & Tails – takes inspiration from the world's great distilling regions. Highlights among the 12 signature cocktails include Kueh Kueh Spirits infused with Peranakan flavours of gula melaka and coconut, and the Highland Hermit, a refined mix of scotch, honey, pear, lemon and shortbread.
With a collection of more than 300 rare whiskies and spirits, Horatio offers both whisky connoisseurs and casual guests an immersive and entertaining experience.
Bibik Violet
Opened September 2025
Housed in a century-old building, Bibik Violet is a traditional all-day cafe and bakery offering a relaxed setting to enjoy classic Peranakan dishes in a bright, casual setting.
Indulge in comforting favourites such as laksa, Nasi Lemak and Kaya Toast, all served in generous portions. Bibik Violet also houses a traditional emporium stocking gifts including delicate chiffon cakes, aromatic freshly ground kopi (coffee) and a selection of premium teh (tea).
Temper
Opened September 2025
Nestled next to the Mondrian Singapore Duxton, this 4,000 square foot establishment is the perfect place to relax and unwind at the end of the day.
Curated by head sommelier Roberto Durran is a wine list of over 1,200 labels and 2,100 bottles from over 30 countries, while the cocktail menu was created by award-winning bartender June Baek. Food-wise, indulge in wagyu burgers and uni linguine, while you enjoy by live jazz, soul, and R&B performances.
Gilmore & Damian D'Silva
Opened November 2025
Local chef Damian D'Silva's tribute to his grandfather Gilmore, the restaurant's location in the National Gallery Singapore is a bonus – Gilmore was former caretaker at the Supreme Court! – one of the building's former iterations – for over two decades.
Recipes passed down through the family have been carefully revived to share with today's diners – modern interpretations of traditional Eurasian and Singaporean cuisine, drawing inspiration from D'Silva's childhood spent with his grandfather.
Barrel Story of Hibiki
Opened December 2025
In the heart of the CBD, this whisky-forward restaurant and bar by Suntory is the first Hibiki concept restaurant outside of Japan. The modern izakaya has been designed to emulate the feeling of stepping into the heart of a whisky barrel, right down to the aroma of wood and a gently crackling fire.
The menu is crafted around robata and wood-fire cooking, with dishes designed to complement perfectly curated whisky flights and inventive cocktails.
Pop City x Pony
Opened December 2025
The latest venue from the Jigger & Pony Group in collaboration with the House of Suntory, this cocktail bar plays into the notion that a great bar is divided into different zones, subtly changing your experience depending on where you are seated within the bar.
18 different cocktails are divided into three sections: 'POP' (taking cues from Japanese pop culture and music), 'CITY' (referencing Japanese aesthetics and fashion), and 'Season In Motion' (two new creations each month inspired by Japan's microseasons).
Tanjong Beach Club
Reopened February 2025
Tanjong Beach Club returned with a refreshed look that blends heritage charm with a modern twist, creating the perfect place to relax and unwind by the sea.
The menu, created by Head Chef Mong Zhen Yew (formerly of Osteria Mozza and Spago), showcases wood-fired coastal cuisine with bold and authentic flavours, with each dish taking on a smoky depth from the Mibrasa grill that is unmistakably indulgent.
Complementing the food is a dynamic wine and cocktail list curated to capture the lively spirit of the beach club, while the wine selection pairs seamlessly with its coastal- inspired fare.
Burgs
Reopened May 2025
After a hiatus from the local food scene, Burgs made a triumphant return with a new flagship outlet on Bussorah Street in Bugis. Housed in a bright red, twostorey shophouse that seats up to 100 diners, this beloved Halal burger joint is back with its signature nofrills, full-flavour approach.
Customers order from digital kiosks and can catch a glimpse of the kitchen crew grilling patties and baking buns fresh on site. They can also select from a variety of options including The Original – a classic cheeseburger, the Big Bird – crispy fried chicken sandwiched between a homemade brioche bun topped with fresh iceberg lettuce, as well as popular sides including Nuggies, with a selection of tasty sauces which are made fresh on-site.
Rempapa
Reopened October 2025
Local celebrated chef and “grandfather of heritage cuisine”, Damian D'Silva relocated Rempapa to become an all-day dining café in the same building as his new restaurant, Gilmore & Damian D'Silva, in the National Gallery Singapore.
Serving up its well-loved delicious blend of Chinese, Peranakan, Eurasian, Indian and Malay flavours, guests can look forward to the familiar comforting dishes of Peranakan chicken curry, tender braised pork leg, and spiced pork belly cooked over a charcoal grill.
