(SINGAPORE, 21 January 2026) Raffles Hotel Singapore proudly announces 1887 by André, a landmark addition to its culinary legacy and the latest signature restaurant under the direction of visionary chef,
André Chiang. Housed in the historic formal dining room of the Main Building in Raffles Hotel Singapore, the restaurant will officially unveil on 31 March 2026, with reservations now open. Set to be the hotel's boldest and grandest culinary endeavour yet, 1887 by André is a social space that will define dining and celebrations in the region and beyond.

A homage to heritage gastronomy presented through the lens of French culinary techniques, 1887 by André invites guests on a journey through time, where culture, craft and cuisine converge. The concept is thoughtfully designed to engage all the senses with its interior design and menus reflecting the evolution of Raffles Hotel Singapore from its 19th-century origins in the year 1887 to the present day.

The Homecoming of a Culinary Visionary

The unveiling of 1887 by André marks the triumphant "homecoming" of André Chiang, returning to Singapore as the Chef Patron of the restaurant. Widely recognised as Asia's most influential culinary leader and a pioneering figure in Singapore's contemporary dining scene, Chef André is celebrated across prestigious platforms; his accolades include the Michelin Guide, The World's 50 Best Restaurants, and the esteemed Lifetime Achievement Award by 50 Best. Chef André's career is defined by his innovative "Octaphilosophy" culinary concept. His return to the city, where his former establishment, Restaurant André, redefined fine dining across the continent, is a momentous collaboration not just for Chef André himself but also for Raffles Hotel and Singapore.

A Taste of Time: Heritage Gastronomy Reimagined

With full respect for traditions yet crafted for the present, 1887 by André offers a gastronomic “taste of time” inspired by the moments, flavours and eras that have shaped both Raffles Hotel and Singapore.

Drawing from the city state's dynamic interplay of rich history, multicultural influences, and modern innovations — from Victorian-era influences to the diverse flavours that define the city today — the menu reflects the evolution of Raffles Hotel and Singapore where both are well-recognised internationally as pinnacles of global crossroads. After all, for more than a century, the stories of Raffles Hotel Singapore are almost synonymous with the history of the city-state.

Historical references from the property's archives are reimagined through the brilliance of Chef Patron André Chiang, alongside interpretations of Singapore's rich tapestry of flavours using locally sourced and cultivated ingredients. Guests should also expect dishes that evoke Victorian-era rituals and revived flavours from Raffles' early dining rooms. There will also be elements retained and presented anew from the yesteryears of this social space such as the silverware collection of Raffles Hotel Singapore including the legendary silver trolley that were buried in the hotel grounds during World War II and uncovered at peacetime. All of these are parts of the larger masterplan to immerse diners in a bygone era while delivering taste-forward experiential dining with modernity.

Presented through à la carte with classic choice set menu options available, the experience reflects stories of place, people and period, accompanied by a curated beverage list showcasing the best of old and new worlds, alongside bespoke alcohol-free creations, inspired by flavours of Nanyang.

A Timeless Spirit of Innovation

With 1887 by André, Raffles Hotel Singapore continues its legacy of pioneering taste and innovation. The restaurant embodies the hotel's commitment to reinterpreting culture and craftsmanship for new generations, forging connections between the past and the future. As a destination that has influenced Asia's culinary landscape for over a century, Raffles once again sets the stage for a transformative dining experience that honours tradition through forward-thinking creativity.

 Visionary Design and Historical Significance

1887 by André pays tribute to the space's century-long legacy as Raffles Grill and Elizabethan Grill. The concept will bring back the elegance of the formal dining room and whose interior design is masterminded by renowned architect and designer, Bill Bensley, who is known for integrating sustainability into his designs.

 The space balances heritage with modernism, referencing the hotel's 139 years of history. Set within the hotel's iconic colonial architecture, the space draws on influences of a glasshouse, featuring materials like marble and wood, incorporated with elements such as palm trees and punkahs that reflect the region's tropical heritage.

Additional design details and images will be unveiled closer to the restaurant's opening.
