Megève, France - December  2025. The Magic Collection Retreats proudly launches Le Simon's new winter menu, marking the start of its first official winter season at Magic Megève Bois.

More than a restaurant, Le Simon is a return to a way of dining that has nearly vanished: one long table, one shared experience, where guests gather for evenings defined by conviviality, conversation and Alpine cuisine shaped by soul.

Rooted in the founding family's philosophy of artful living and shared hospitality, Le Simon embodies the values that define The Magic Collection, memory, intimacy, storytelling, and uncompromising quality. Here, gastronomy becomes an expression of place, shaped by the seasons and by a belief the family has lived for generations: the table is the beating heart of every home.

Located at the warm centre of Magic Megève Bois, a communal table at the centre of the chalet, Le Simon reflects the spirit of the retreat: a place where art, comfort and conviviality coexist. Its defining feature, a single, expansive communal table,  brings guests together in the way the family has always welcomed friends around their home table.

Whether arriving straight from the snowy Princesse slopes or returning from summer forest walks, diners gather around one table to taste, share, and linger in true Alpine intimacy. 

The cuisine at Le Simon blends French gastronomic discipline with the Italian obsession for ingredient purity and simplicity. This culinary identity was shaped by the meeting of Simon,  a quintessential French gourmet, with a joyous, expressive group of Italians who introduced him to spontaneity, abundance, and the beauty of a perfectly ripe ingredient. The culinary team works closely with local producers and artisans, allowing the best regional ingredients to dictate the menu. The result is a cuisine that feels both grounded and elevated, nostalgic yet inventive, always honouring the landscape that surrounds it.

This season, the winter menu amplifies this fusion of Italian and Alpine-French cooking — led by a team of Italian chefs who reinterpret tradition with creativity. Imagine a Milanese saffron risotto with a French touch, a Tiramisu 2.0 with a modern twist, and a reimagined vitello tonnato.

Starters highlight seasonal vegetables, mature cheeses, and artisanal charcuterie.
Mains range from hand-crafted pastas enriched with Reblochon fondue and fresh truffle, to monkfish and prawns served with topinambour and an aromatic bisque, to pristine cuts of meat paired with mountain herbs, braised vegetables and elegant purées. Le Simon's philosophy is simple: quality above all, simplicity elevated, heritage honoured.

Le Simon's wine cellar is the result of decades of family passion, offering bottles from Burgundy, Bordeaux, Tuscany, Piedmont, and the Rhône. The collection includes exceptional wines at a wide range of price points, from rare vintages for collectors to accessible favourites chosen for authenticity and character. Guests can also discover this oenological universe through private tastings in the chalet's cellar. 

Le Simon is also available for private events, from intimate wine tastings and birthdays to small meetings and bespoke celebratory dinners.

Magic Megève Bois, recognised in the Michelin Guide Hotel Selection, is a sanctuary of contemporary Alpine refinement. From Martino Gamper's custom furniture to the Archivorum-curated library, every detail reflects the family's devotion to artistic storytelling.

This season, the story grows further. The Magic Collection Retreats also introduces The Andrew – a new opening in Magic Megève Bois and, in spirit, the brother of Le Simon. If Simon embodies ritual, warmth and the art of gathering, Andrew represents another side of the collection's personality. Who Andrew is, and how his character intertwines with Simon, will soon be revealed – opening the next chapter of the Magic gastronomic journey.
