Niseko, Japan, December 2025: Beyond stylish vacation homes to dwell in, The Luxe Nomad aims to deliver meaningful experiences for its guests. Two years ago, Niseko Kyo launched as one of Niseko's most luxurious ski-in, ski-out condo hotels. Today, The Luxe Nomad ushers in a new era of elevated dining with MASONRY. Japan, bringing its signature Mediterranean-inspired cuisine and refined philosophy to the slopes of Niseko. 

After 7 years shaping Bali's vibrant dining scene, the much-loved restaurant group opens from 15 December 2025, led by acclaimed Chef and Co Founder Ben Cross and Head Chef Tom Jack. Tom's background in kitchens shaped by Japanese flavour (including Shōbōsho in Adelaide and hôntô in Brisbane), bring clarity and balance to their first international outpost in Niseko. The concept is a meeting of minds between The Luxe Nomad as curators of space, and MASONRY. as architects of taste, built for long lunches, lively après ski drinks and evenings that roll on.

Mediterranean Flavours Meet Hokkaido's Finest

At its new home, MASONRY. Japan blends craft — made from scratch, by hand, with care — with Hokkaido's finest ingredients. Dishes are shaped by local produce including the richness of Hokkaido milk, winter seafood and the fragrance of mountain herbs, all brought into focus through fire. Menu highlights include: House Made Halloumi with Hokkaido milk with buckwheat honey and kombu, Yellowfin Tuna Crudo with smoked egg yolk and citrus; Giant Hokkaido Scallops cooked gently over fire with seaweed butter; Furano Wagyu Striploin with mandarin kosho; Wood Fired King Crab with dashi brown butter; and Miso and Hokkaido Milk Ice Cream with winter honey. 

Après-Ski Elevated: Cocktails and Curated Wines

Bar Director Zac de Git (formerly Tippling Club Singapore) brings modern technique and refined flavours to the cocktail list, including Niseko exclusives such as the Goma built on sesame spirit and fresh citrus. The wine selection, overseen by COO Marcus Boyle, a certified member of the Court of Master Sommeliers, offers a clean, style-led edit that draws from both regional and international makers to complement the wood-fired menu.

Designed For Sophisticated, Cosy Slopeside Dining

With its 60-seat dining space and extended bar, designed by Vyvial & Co., MASONRY. Japan is a cosy retreat from the snow where warm lighting, rich textures, and natural finishes create a lively, welcoming energy. An open kitchen and bar brings MASONRY.'s signature atmosphere to the mountains. Niseko Kyo complements the design with contemporary interiors inspired by komorebi — the enchanting play of sunlight filtering through trees — reflected in its elegant fusion of wood and stone finishes. Conveniently located within Niseko Kyo, skiers and snowboarders can glide directly in from the slopes for lunch or head up from Hirafu-zaka for dinner.
