Accor Sydney Olympic Park Serves Up a New Era of Coffee With Single O

Coffee has always been part of the morning ritual, and  it's just been taken to the next level. The precinct's three hotels, Pullman, Novotel and ibis, have officially raised the bar by partnering with local specialty roaster Single O,

It's a small change with big meaning. The move signals a new direction for the precinct, one that embraces craft, character and care, with a focus on delivering the highest  quality experience for guests and a positive impact for the planet.

From this month, guests can enjoy Single O's Collider blend, a specialty coffee roasted right here locally in Sydney. Known for its smooth, rich flavour and reliable consistency, the blend will be served across restaurants, bars, cafés and meeting spaces.

For Joe Poovaiya, Director of Food & Beverage, the shift represents far more than a change of beans.

“This project has been a long journey, and I genuinely want to thank everyone who supported it throughout the lead-up,” Poovaiya said. “The team and I are incredibly proud of what this represents for our precinct. We're excited to bring this to life, stepping into a new chapter of who we are and how we show up for our guests, our community and our planet.”

That commitment to community and care doesn't stop at what's in the cup. The precinct has also joined Single O's 'Giving a Puck' program, in partnership with Reground, turning every espresso into an opportunity to make a difference. All used coffee grounds from the hotels will now be collected weekly and diverted from landfill, where they would otherwise produce harmful methane gas. Instead, they'll be repurposed for community gardens, regenerative farms and soil enrichment projects across NSW, contributing to what is now the state's largest coffee grounds upcycling initiative.

Mike Brabant, CEO of Single O, said the collaboration brings together two like-minded teams passionate about quality and sustainability.

As the first Accor Hotel in the country to roll out the Single O partnership, Sydney Olympic Park is setting the tone for what's to come across the brand. The initiative aligns closely with the precinct's broader sustainability roadmap, which focuses on reducing waste, elevating local partnerships, and creating experiences that connect meaningfully with guests.

Benjamin Nesbitt, General Manager of Pullman, Novotel & ibis Sydney Olympic Park  said the Hotels are proud to lead the change.

The new coffee offering will feature across the precinct's dining and conference venues, with the Collider blend also available for meetings and events.

Guests booking their next meeting or event by 31 January 2026 can enjoy a range of benefits designed to make hosting effortless.
