Chef Stéphane Simond partners with Oliverra's Chef Angga Suarthama for an intimate six-course pairing dinner in Umana Bali's celebrated culinary series
Following the success debut earlier this year, Oliverra Tables at Umana Bali, LXR Hotels & Resorts, returns with its next chapter of culinary storytelling – this time, blending the soul of the French Riviera with the rhythm of the Mediterranean coast.
Hosted at Oliverra, the resort's signature Mediterranean restaurant, the second edition of Oliverra Tables welcomes acclaimed French chef Stéphane Simond, celebrated for his refined approach to modern French cuisine, for an exclusive six-course pairing dinner on Friday, 14 November 2025. The evening is conceived as a vibrant dialogue between cultures, flavors, and philosophies, brought to life through a seasonal tasting menu crafted in collaboration with Chef Angga Suarthama and the Oliverra team.
“Oliverra Tables is our way of bringing creative voices into one kitchen,” said Ngurah Putra, Executive Chef at Umana Bali. “Each edition is about more than flavour; it's about connection, conversation, and craft. With Chef Stéphane, we're exploring how French refinement and Mediterranean generosity can find harmony here on the cliffs of Ungasan.”
The evening begins at Oliverra Deck where guests are invited to enjoy curated cocktails and aperitivo at sunset, followed by a six-course tasting experience inside Oliverra Restaurant, accompanied by the soul-stirring sounds of a live violinist.
Each dish on the menu reflects a thoughtful blend of French elegance and Mediterranean heart—elevated by Balinese terroir and technique. Together, the chefs present a menu that captures the beauty of collaboration in both form and flavor.
Highlights from the evening include:
- Monegasque Blue Fin Tuna Belly with saffron aioli and Mediterranean anchovies
- Spiedini di Calamari with cuttlefish, harissa, and ginger flower butter
- Fiore di Carciofi with yabbies kofta, arugula mint pesto, and vanilla oil
- Red Mullet Fillet in Chilli–Orange Vinaigrette with chickpea fritter and mussel mouclade
- Wagyu Mille-Feuille with foie gras terrine, celeriac, and yuzu meat reduction
- Citrus & Hazelnut Brioche Tart with lavender ice cream
“For me, cooking is a conversation between memory and creation,” said Chef Stéphane Simond. “Working with the Oliverra team has been inspiring; together we've created a menu that's expressive, honest, and filled with the warmth that defines great food and hospitality.”
The dinner takes place on Friday, 14 November 2025, from 6 pm onwards, where guests will begin the evening with curated cocktails and light aperitivo at Oliverra Deck before moving to the restaurant for the six-course menu accompanied by live music. Priced at IDR 1,700,000++ per person (food only), guests may also opt for the full pairing experience, including aperitivo, dinner, and wine pairing, at IDR 2,500,000++ per person.
