Table For, Accor's newly formed in-house F&B group in the Pacific, will open its first venues this November in collaboration with The Maybe Group, creators of the award-winning Maybe Sammy and regulars on The World's 50 Best Bars list. Together they will debut Bar Allora and El Vista, marking the beginning of Table For's mission to redefine hotel dining across the region.
BAR ALLORA - Opening Mid-November, Bond Street.
Bar Allora, opening mid-November on Bond Street in Sydney's CBD, is a modern Italian bar and restaurant, inspired by the fast-paced rhythm of Milan. A design-led all-day space, Bar Allora captures the soul of Italian style and flavour, where guests can stop for a quick espresso, linger over a Negroni or Martini, or settle in for a vibrant dining experience.
Led by Chef Rosy Scatigna, Table For's Culinary Director and Head Chef, Josh Donachie (Jane, Jackson's on George, RE), the menu celebrates Milan's post-war restaurant boom and the southern Italian immigrants who shaped its joyful, soulful approach to food. Expect bold, flavour-driven dishes that are nostalgic yet modern, paired with cocktails that pay tribute to 1980s Italy - timeless classics reimagined with a contemporary twist.
The interiors draw on Italian Futurism, with a neon-lit bar, high tables and striking feature walls, creating a lively, stylish and welcoming space.

EL VISTA - Opening late November, Circular Quay
Later in November, El Vista will open inside Pullman Quay Grand Circular Quay (formerly Hacienda), a glamourous Latin-inspired escape transporting guests to the golden era of 1960s Acapulco. Inspired by South American style and culture, the venue will immerse guests in the sun-soaked sophistication of a time when the Mexican coastline was the playground of Hollywood stars, jet-set travellers and lovers of life's finer pleasures.
Every detail, from the Latin-inspired cocktails and curated music to the stylish interiors will transport guests to a world of champagne sunsets, flowing dresses, tailored suits, and lively celebrations. The cocktail menu, crafted by the Maybe Sammy team, is a vibrant celebration of Latin America, balancing iconic classics and bold new signatures. Expect perfectly balanced Margaritas, zesty Daiquiris, Palomas bursting with pink grapefruit, and indulgent Piña Coladas, alongside inventive creations like a smoky mezcal Old Fashioned, a rum-and-coffee cocktail spiced with warmth, and a fiery chilli-laced tequila spritz.
From the kitchen, a menu designed by Giovanni Pilu brings the bright, fresh flavours of Latin America to the table. Think aguachile de seriola, torita de cangrejo and golden corn dough with cheese empanadas and street-food favourites like yellowfin tuna crispy tacos and chorizo hot dogs, dishes made for sharing and perfectly paired with El Vista's cocktails.
Afternoons will sway with Latin jazz and golden-hour cocktails, evenings will pulse with electric disco, funk, and global grooves, while weekends will offer acoustic brunches and sultry Latin nights. El Vista will be a living celebration of glamour, style, and joyous social connection, a space for both casual moments and unforgettable nights.

FLAMINIA - Opening early December, Circular Quay
The two new bars signal an exciting summer ahead for Table For, which will also open its first restaurant, Flaminia, in early December. From the acclaimed team behind Pilu at Freshwater, Giovanni Pilu and Marilyn Annecchini, Flaminia is a harbourside Italian restaurant celebrating the warmth, flavour, and produce of Italy's portside dining. Positioned above the water's edge at Pullman Quay Grand Circular Quay, it tells a story of connection, between people, place, and plate, with a menu that celebrates Australian seafood and the vibrant flavours of Italy's coastal towns.
Last month, Accor announced the launch of Table For, a platform for collaboration between visionary hospitality partners including hospitality luminaries Stefano Catino and Vince Lombardo of the Maybe Group, earned-led culture agency Example and Accor's in-house expertise across culinary, operations, design and guest experience.
