An exclusive six-course pairing dinner at Umana Bali's signature restaurant redefines culinary and cocktail synergy
Oliverra, the signature Mediterranean restaurant at Umana Bali, LXR Hotels & Resorts, debuts Mixology Collective, a new collaborative dinner series spotlighting the intersection of haute cuisine and inventive cocktails. For its inaugural edition, Oliverra welcomes Taketo Utsunomiya, the creative force behind NOTTE Uluwatu's bar program, for an exclusive six-course pairing dinner that unites flavor, artistry, and storytelling.
As mixology gains prominence in fine dining, Mixology brings together leading chefs and bartenders from across Bali and beyond, offering diners a new dimension of flavor and storytelling. By bridging culinary technique and mixology innovation, the series is a creative dialogue where every cocktail is designed to mirror, challenge, or elevate the dish it accompanies.
“With Mixology Collective, we're exploring a rhythm in our dining philosophy, where drink and food can move in tandem. Taketo's refined, flavour-forward style allows us to discover unexpected harmonies and surprising contrasts, all in service of a deeper, more sensorial experience for our guests,” says Ngurah Putra, Executive Chef at Umana Bali.
The inaugural dinner takes place on Friday, 7 November 2025, at 6 pm. Guests will begin the evening with a Verde Gin Tonic, setting the tone for an immersive six-course progression. Signature pairings include:
- Oysters with a NIKKA Coffey Gin martini
- Scallop matched with a passionfruit-yuzu-bamboo cocktail finished with wasabi salt
- Ravioli paired with an Aperol and vermouth highball
- Coffee-smoked beef cheeks complemented by a smoky KOCH Mezcal and Bali's LIMO liqueur
- A delicate whiskey and Earl Grey tea cocktail to close the evening on a fragrant, mellow note
At every turn, guests will experience how cocktails can function not just as accompaniments, but as integral parts of a dish's identity — enhancing, echoing, or redefining the dining experience.
“Pairing cocktails with a tasting menu is like creating music where each course is a note, and the drinks are the rhythm. I wanted to craft cocktails that don't just accompany the dishes but reveal new layers of flavor, making the journey more memorable,” says Taketo Utsunomiya, Head Bartender of NOTTE Uluwatu.
Priced at IDR 1,700,000++ per person (food only), guests may also opt for the full pairing experience, including aperitivo, dinner, and cocktails, at an additional IDR 800,000++.
