
After a highly anticipated opening season, Haven at Mondrian Gold Coast is celebrating the arrival of spring with an evolved menu and line-up of new lifestyle activations. Perched above Burleigh's pine-fringed shoreline, the restaurant and pool club continue to redefine coastal dining with produce-driven dishes, curated experiences and effortless hospitality.
Executive Chef Aaron Teece has introduced a series of new spring plates that reflect the region's best seasonal ingredients. Highlights include a Prawn Bisque Risotto with local prawns, saffron and espelette pepper; a vibrant Seafood Chowder with lemon myrtle–steamed fish, mussels and pipis; a Slow Cooked Lamb Shoulder layered with textures of onion; and woodfired creations such as the Australian Bay Bug Karaage and a Scallop with crispy chilli and potato. For dessert, the menu adds a warm, share-style Apple Tarte Tatin with Tommerup Dairy crème fraîche.
“Our goal is to let the seasons guide us,” Aaron said. “This spring menu brings in lighter, brighter flavours from the coastline alongside heartier dishes designed for sharing. It's food that feels rooted in place but always sparks a sense of occasion.”
This sense of celebration continues into November, when Haven's poolside transforms for Melbourne Cup Day with gourmet seafood dining, a 3.5-hour beverage package, live race coverage, fashions on the field and DJ entertainment hosted by MC Dan Anstey. Guests can choose from the four-course Haven Restaurant experience ($395pp), a lively Sunset Bar celebration with roving canapés ($295pp) or exclusive VIP Cabanas from $4,000 with private host service.
In addition to the Melbourne Cup Day festivities, Haven's program of activations offers fresh ways to experience the venue this season:
- Oysters & Champagne – Enjoy three oysters and a glass of champagne for $30pp, Monday to Friday from 3–5pm.
- Haven Set Menus – For all bookings over 4 on the $108pp set menu, the table will receive a complimentary upgrade to the $148pp seasonal dining experience, available until 31 October.
- Coastal Reverie | Melbourne Cup at Haven – Celebrate Cup Day poolside with gourmet seafood, a 3.5-hour beverage package, live race coverage, DJs and fashions on the field, Tuesday 4 November, 11:30am-3:00pm.
- DJ Sessions – Experience live DJ sets every Friday to Sunday, bringing golden hour energy to the pool club and restaurant.
- Cabana Lunches –Enjoy 2.5 private cabana dining with dedicated VIP service and bespoke menus ($900 minimum spend with an 8-guest capacity).
From ocean-to-table dining to sunset soundtracks, Haven continues to evolve as a destination where provenance meets play.
