Showcasing rich BBQ flavours alongside a curated selection of smokey cocktails, this new bar experience is available every Wednesday through Sunday, starting Friday 6 June, 2025.
Inspired by the soul-warming essence of comfort food, the culinary team under the leadership of Executive Chef Fuji has crafted a menu that embraces low and slow cooking style to bring in a sense of warmth this winter. “We wanted to create something that speaks to the senses, which is why we thoughtfully designed menus that bring comfort and flavour this cozy season,” says Chef Fuji.
Complementing the menu is a curated range of new cocktails that feature smokey infusions, each designed to pair effortlessly with the menu or stand alone as a signature sip in the warmth of Hibiscus Bar & Terrace. “Our latest seasonal menu infuses the bold, warming essence of smoke with the refined elegance of classic mixology,” says bar manager Chloe Smith.

About Chef Fuji Taukatelata
Fuji Taukatelata's path to the kitchen wasn't conventional. Instead of pursuing a career in criminology, she embarked on an apprenticeship in hospitality following a 35-hour placement at Campbelltown Catholic Club. Eighteen years later, what began as curiosity has blossomed into a deep passion—fueled by memories of her mother's cooking and strengthened by the lessons learned, the connections made, and the profound sense of purpose she's found in bringing people together through food.
Driven to challenge herself and break into the hatted restaurant scene, Fuji immersed herself in Sydney's vibrant culinary landscape, seeking mentorship from iconic chefs like Nino Zocalli, Martin Boetz, Kylie Kwong, Peter Gilmore, and Christine Manfield. Their guidance helped her refine her technique and embrace the art of storytelling through food—skills that earned her prestigious accolades, including the Taste of Success in 2012 and the Aqua Dining Scholarship in 2013.
These accomplishments opened the door to a transformative opportunity in London, where she trained at the Michelin-starred The Ledbury under Chef Brett Graham.
In 2018, Fuji joined Park Hyatt Sydney as Sous Chef. Over the next five years, she worked her way up to Executive Sous Chef, playing a pivotal role in collaborating with acclaimed chef James Viles to bring Dining by James Viles, the hotel's hatted restaurant concept, to life.
