Park Hyatt Sydney Celebrates 35 Years of Iconic Luxury with a 10-hand Chef Collaboration, Exclusive Stay Packages, and New Storytelling Platform

One of Australia's most iconic luxury hotels is turning 35 and the hotel is marking the milestone with a celebration as memorable as its harbour views.

Opened in 1990 as the first Park Hyatt in the Asia Pacific region, Park Hyatt Sydney was the third hotel to join the global portfolio, following the brand's flagship debut in Chicago in 1980. Since then, it has set the benchmark for understated luxury, renowned for its panoramic views of Sydney Harbour and the iconic Opera House, refined culinary experiences, and genuinely personalised service.

To celebrate its 35th anniversary, the hotel is unveiling a series of experiences from a 10-hands dinner with some of Australia's most respected chefs, to a newly launched storytelling microsite and a collector's anniversary book available exclusively to invited guests and those booking a special stay package.

A One-Night-Only Dinner Celebrating the Past and Present

On Saturday, 28 June 2025, Park Hyatt Sydney will host a special five-course anniversary dinner in The Dining Room, celebrating the hotel's culinary legacy through a rare 10-hands collaboration.

The evening will bring together five chefs who have each shaped the hotel's gastronomic identity: James Viles, the creative force behind the restaurant's current concept; Executive Chef Tyson Gee; Executive Pastry Chef Callum Liddicoat; and two guest alumni – Anthony Mussara and Alessandro Pavoni, both of whom held the Executive Chef title at the hotel in the early 2000s.

Pavoni, now the chef-owner of a'Mare in Sydney and Ormeggio at The Spit in Manly amongst others, returns to the kitchen where his Australian career first took flight. Mussara, a Sydney-born chef, has led acclaimed venues including Stokehouse Melbourne and held senior roles with the Van Haandel Group and Scott Pickett's restaurant group. His return to Park Hyatt Sydney marks a meaningful homecoming to where his culinary journey began.

Together, the chefs will craft a seasonal five-course menu, paired with free-flowing wines.

A percentage of proceeds from the dinner will be donated to the Heart Research Australia, a cause personally significant to Pavoni.

A Dedicated History Page on Park Hyatt Sydney Suites Microsite

In tandem with the celebrations, Park Hyatt Sydney will unveil a dedicated storytelling page on its suites website on 1 July 2025, a date that marks the hotel's original opening in 1990. This digital experience offers a digital gateway into the past, present and future of the iconic property. From the site's transformation into a luxury hotel, to its role in shaping Sydney's hospitality scene.

To bring this history to life, the hotel commissioned historian Dr Fiona Starr of Australian Lived Histories who has uncovered stories spanning from Deep Time through to the 1990s. The stories uncovered reflected the cultural, social and environmental layers of the shifting shorelines and the lives once lived on the very site the hotel occupies.

Celebrations Continue in July

  • The Dining Room will offer a special menu of dishes inspired by the hotel's story, each available for $35 in honour of the occasion.
  • The Spa – Guests who book a treatment during the month will receive a complimentary gift to mark the celebration.

This 35th anniversary is more than a moment. It's a celebration of the past, present, and future of Park Hyatt Sydney, and the many stories that live within its walls.
