Haven Opens at Burleigh Heads, Redefining the Rhythm of Coastal Dining

Perched above the pine- and pandanus-fringed shoreline of Burleigh Heads, Haven is the new restaurant and beach club redefining the rhythm of coastal dining on the southern Gold Coast. Led by Executive Chef Aaron Teece (formerly of EST., Felix, Manly Pavilion, and Studio Neon founder), the venue offers a refined yet relaxed all-day experience where provenance meets play.

Spanning a third-floor dining room, pool club, private cabanas and sunset bar at Mondrian Gold Coast, Haven is designed to shift with the day, from sun-drenched lunches to twilight drinks and lively evenings. The venue combines effortless hospitality with a sense of occasion, elevated by Pacific Ocean views and a soundtrack of curated playlists, DJs and live performances.

The cuisine is grounded in the coastline, with menus shaped by seafood from Cairns, the Sunshine Coast and Northern New South Wales, alongside premium paddock-sourced meats and seasonal produce from the hinterland. A woodfire grill sits at the heart of the kitchen, adding depth and character to dishes across both the restaurant and poolside menus.

“I want people to feel the season and the source with every bite, because when ingredients are respected, simplicity speaks loudest,” Aaron said. “We're not trying to overwork anything — the quality of the produce does the talking. It's all about creating food that feels grounded but still sparks a sense of occasion in this beautiful part of the world.”

Aaron brings a sharp focus to regional sourcing and open-flame technique, drawing on a career across some of Australia's most respected kitchens. At Haven, he's created a menu that's polished but approachable: raw bar offerings, share plates and fresh, expressive flavours designed to suit the coastal pace and interiors by Sydney-based Alexander &CO.

The drinks list follows suit. Guests should expect an extensive champagne selection, Australian and international wines, a coastal-inspired cocktail program and a dedicated agave menu featuring tequila, mezcal, raicilla and bacanora. Drinks are poured throughout the venue, whether poolside in a cabana, at the sunset bar or over lunch in the restaurant.

Drifting from midday to moonlight, Haven invites a slower kind of dining, anchored in place, led by the seasons and touched by the sea. It's a space designed not just to be seen, but felt. Haven will begin to welcome guests from 5 June at its home within Mondrian Gold Coast – the first Mondrian hotel in Australia, powered by Ennismore in collaboration with Vitale Property Group.
