From May 23 to June 14, 2025, this limited-time offering allows guests to step into a world where light, artistry, and exceptional flavours seamlessly blend together. With Vivid's 2025 theme, Dreams, as the inspiration, the hotel promises a spectacular fusion of creativity and culinary mastery in an experience that will ignite the imagination.

A Menu That Dreams Are Made Of

 Executive Chef Tyson Gee and Executive Pastry Chef Callum Liddicoat have crafted a Vivid-inspired set menu ($95 per person) designed to delight the senses and honour the festival's dreamlike essence. Drawing on seasonal, sustainable ingredients, the dishes pay tribute to the transformative power of creativity and the beauty of nature. Available from May 23 to June 14, 2025, guests can savour this inspired menu at The Living Room or The Dining Room, both offering unparalleled views of Sydney Harbour.

  • Imagine – Milk Chocolate + Passionfruit + Popcorn + Banana
    Inspired by the ever-changing light installations projected onto the Opera House, the dessert is adorned with fresh flowers and finished with a glistening passionfruit glaze, mirroring the vivid hues and dynamic movement of Vivid Sydney's iconic illuminations.

  • Dream – Rose + Ricotta + Rhubarb + Pink Lady
    A vision in delicate pink hues, this dessert mirrors the ethereal beauty of dreams. The floral notes of rose and the creaminess of ricotta intertwine with the tartness of rhubarb and crisp pink lady apples, creating a dish that is both elegant and imaginative.

A Cocktail Illuminated by Dreams

Complementing the menu is the Golden Ember, a specially crafted Vivid-inspired cocktail, priced at $22. Created by Head Bartender Kevin Botte, this exquisite drink combines Ketel One Vodka, local honey, and homemade lemon myrtle soda. The mocktail version, priced at $19, is made with Seedlip Garden Spirit No Alcohol Gin, honey, and lemon myrtle soda. The cocktail's golden glow symbolises hope, clarity, and the radiant energy of light, reminiscent of the vibrant displays at Vivid Sydney. Finished with a delicate honeycomb garnish, the Golden Ember offers a drink as sweet and luminous as life itself.
