With 2025 ushering in the Year of the Snake, an auspicious array of culinary creations and exclusive cocktails symbolising wisdom, elegance, and prosperity will be available from 27 January to 2 March 2025.

Lunar New Year Afternoon Tea
Inspired by the vibrant flavours of the Lunar New Year, the Lunar Afternoon Tea at The Bar offers a delightful journey through sweet and savoury indulgences, all set in the stunning surroundings of the hotel’s heritage ambience.
Guests can enjoy colourful creations such as the Rambutan Coconut Verrine and the decadent Black Sesame Mousse Roulade, alongside savoury highlights like the Chili Crab Cannelloni and Peking Duck Wraps.

Fullerton Prosperity Salad Toss “Lo Hei” (A$88 for two): features Ora king salmon, Hiramasa kingfish, and Harvey Bay scallops ceviche tossed with fresh vegetables and plum vinaigrette.
XO Pipis (A$48): Locally sourced pipi clams from Ballina wrapped in a traditional XO sauce served with jasmine rice.
Eight Treasure Dim Sum Basket (A$28): A vibrant selection of handcrafted dim sums with premium ingredients including shuimai with smoked salmon roe, Har Gow with grilled tiger prawns and more.
