From 29 January to 2 February, The Dining Room by James Viles at Park Hyatt Sydney invites you to celebrate Lunar New Year with a specially curated seven-course menu. Designed to honour the rich traditions of the Lunar New Year while showcasing the finest local ingredients, this dining experience promises to be as exquisite as it is memorable.

Begin your culinary journey with snacks to whet your appetite, including a Mud Crab Tart with soy and ginger egg, and Yellowfin Tuna paired with seaweed jelly and lemon-cultured butter. Savour the delicate flavors of Salt & Pepper Southern Rock Lobster served in a fragrant XO broth, followed by Murray Cod complemented by braised daikon and Shaoxing wine.

For the main course, indulge in the richness of Maremma Duck accompanied by black garlic and oyster mushrooms. End on a sweet and refreshing note with a dessert of Frozen Lychee and Yuzu, an elegant finish to a celebratory feast.

The seven-course set menu is priced at $288 per person, with the option to elevate your experience further with an expertly paired wine selection for $188.
