A New Year’s Eve Dinner at Hobart’s Belvedere Restaurant

On the drinks list, locally made spirits include Brogan’s Way, Four Pillars and Starward, share space with Australian wines and craft beers. The Q rooftop bar signature drink, a Kol Gin with local distiller, Antagonist, is always a fun way to start the night. 

Small plates and d like crispy soft-shell crab bao; shitake mushroom dumplings; raw blue fin tuna; crispy chicken ribs and loaded char sui pork fries with sesame hoi sin sriracha and spring onion complement the drinks menu.

Sweeping Views from Flinders Street’s Tallest Rooftop Bar  

MELBOURNE: Soaring 68 metres above Melbourne's iconic Flinders Street, Fleet is the tallest rooftop bar in the neighbourhood, showcasing sweeping views of the Yarra and beyond.  

Fleet’s stylish, travertine bar is generously stocked with more than 100 different rums from around the world. Local distillers like JimmyRum, Boatrocker Distillery and Queensland’s Beenleigh Distiller sit alongside international rum producers from Guatemala, Puerto Rico, Jamaica, and Cuba. A vintage and rare bottle collection, dating back to the 1930s, completes the rum offering.  

Beyond rum, guests can also voyage through 50 different gins from international and local producers such as Four Pillars, Bass & Flinders, and Patient Wolf distilleries; fine whisky from around the world; local craft beers; and a selection of wines from the Yarra Valley, Geelong, Mornington Peninsula, and surrounds. Fleet has even partnered with Victoria Gin maker Dutch Rules, to create Brim Gin - a zesty, fragrant coastal gin inspired by Fleet’s views and location where water meets land. 

There’s also a strong list of timeless cocktail classics, signature blends and experimental combinations, all with a distinct Melbourne-style and nautical flavour. 

By design, Chef Asish Kumar’s shared menu pays homage to Victoria’s best producers and is the perfect complement to the drink's selection. Think freshly shucked oysters with spice ponzo mignonette; half shell seared scallop drizzled with lemon chilli butter and Yarra Valler caviar; braised pork cheek croquettes; honey baked brie with walnuts, fig relish and buckwheat crackers; Hiramasa Kingfish crudo; Gippsland lamb loin with cumin labneh and jus; and charcoal mushroom arancini with truffle mushroom ketchup and parmigiano Reggiano.

Rendezvous Film Club Reboots for Summer  

SCARBOROUGH: Rendezvous Hotel Perth Scarborough has rebooted its popular outdoor rooftop cinema and extended its program to introduce a blockbuster lineup, and under-the-stars snacks and sips.   

This Christmas, movie-buffs will enjoy an extended festive program of seasonal classics like Die Hard, Home Alone, Love Actually, and more. While summer sees cult favourites hit the big screen every Thursday, Friday and Saturday night, from nostalgic rom coms to thrilling action and cherished family favourites.    

Guests can choose to start their night at the hotel’s exclusive Club Lounge on Level 25 for creative cocktails and delicious dumplings. Think spicy margaritas, espresso martinis and smoked negronis alongside bamboo baskets of vegetarian gyoza, prawn gow and chicken dumplings.  

The Observation Deck opens at 6.45pm with deck chairs available on a first come, first served basis for a 7.00pm movie start. During the movie, guests can purchase drinks from the pop-up bar, as well as salted popcorn and desert boxes. 

There’s also a range of Film Club packages starting from $45. The VIP Godfather Package is perfect for date night and includes movie tickets, cocktails, and dumplings for two plus a popcorn, luxe blanket, and priority seating from just $150. 

Film Club is not the only update from Rendezvous Scarborough this summer. Perth’s first and only beachside hotel high rise, is getting a summer glow-up thanks to a multi-million-dollar refurbishment. The rolling two-year refurbishment program will see 330 hotel rooms refreshed; upgrades to the hotel’s front entrance and conference space with additional works planned for the hotel’s iconic swimming pool, and public areas.

Dean & Nancy’s Dream New Cocktail Menu 

SYDNEY CBD: Dean & Nancy on 22 at A by Adina Sydney have dreamed up a new signature cocktail menu that invites guests to explore the fifth dimension with their tastebuds.  

World of Dreams, features 14 deliciously creative cocktails including Dean & Nancy’s first interactive cocktail – The Ayahuasca Daisy ($28) made of tequila, honeydew and apricot tea, berries, and Montenegro Amaro – and comes complete with 3D glasses to create a sensory, dreamlike experience. 

Without giving too much away, Restaurant and Bar Manager, Stefano Filardi says the 3D experience of the Margarita-style Ayahuasca Daisy is connected back to an illustration on the menu as a little surprise and delight moment for guests. 

By contrast, the Velvet Venom Milk Punch ($29) is served in a glass shaped sea urchin. Beneath the spiky exterior, the milk punch features Flor de Caña 12yo Rum infused with matcha, toasted rice, coconut, almond, and vanilla to evoke a tropical sweetness. The flavours of this cocktail slowly unfold like a hidden treasure found by those willing to look deeper. 

The Bubble Dream Spritz ($27) takes its inspiration from bubbles being the doorways to possibilities. Here, Altamura Vodka is blended with Aperol, Rooibos tea, passionfruit, and vanilla to give off a fruity flavour profile. While the Lotus Old Fashioned ($35), made of Dalmore 12yo Scotch Whisky and a hint of cashew, muscovado sugar and pepper berry, is reminiscent of a classic Old-Fashioned drink, so the lines between now and then blur.

Adina Town Hall – 14 February 2025 

SYDNEY CBD: Bates Smart’s multi-million-dollar top to tail transformation of the 144-room Adina Town Hall Sydney is timeless, sophisticated and aims to create a beautiful, liveable space that will make guests return time and time again to the inner-city address. 

The reimagined rooms exude a warm, casual elegance, and showcase interior design aimed at making guests feel instantly at home in the space. 

Bates Smart Interior Design’s Director, Brenton Smith, said he firmly believed that the more a person felt at home, the more it becomes their own space, and had embodied those principles into the hotel’s design. 

“First and foremost for us, our approach was to make the Adina feel more like a residence,” he said. “This meant we took off our hotel hats and designed a beautiful apartment that we’d like to live in.” 

From the arrival experience in the lobby-cum-living room – with a striking circular banquette, warm and calm colours, and reception pods that invite one-on-one interaction to the use of timber, and the inviting furniture in room - each detail has been curated to provide a warm, uncluttered welcome.  

At the Adina, the devil is in the design details. Spotlights shine on curtains which hug the corners of the room and invite you into the space; sculptural brass sticks double as door handles; atmospheric lighting that projects shapes and patterns on wallpaper; and a beautiful brass drum invites guests to congregate in the kitchen with a glass of wine as they prepare meals, have all been thoughtfully considered.

AUSTRIA: Australia’s premium A by Adina apartment hotel brand will make its European debut with the opening of a 108-room A by Adina Vienna in the 48-storey DANUBEFLATS, Austria's tallest residential tower.  

For its European debut, A by Adina has chosen a sensational location on the banks of the Danube River and a residence inside Austria’s most prestigious residential tower. A by Adina Vienna will sport a fresh and elegant design concept, which sets a new standard for luxury short-term apartment style hotel accommodation.

Hannah St. Hotel – Q3 2025 

SOUTHBANK, MELBOURNE: The 188-room boutique luxury Hannah St. Hotel, which sits at the nexus joining Melbourne’s CBD, the Yarra River, South Melbourne, and the Arts Precinct, is slated to open its doors in late 2025. 

Hannah St. Hotel – designed by Architects, Elenberg Fraser and featuring interiors by Melbourne-based Flack Studio - is perched across 10 levels of The Queensbridge Building and will feature a neighbourhood bar, restaurant, and rooftop bar/events space. The hotel also features a lap pool, wellness studio, gym, sauna, steam rooms, co-working spaces, providore in the foyer and private dining room. 

“What I love about this project is that Hannah St. Hotel will deliver an experience in a neighbourhood that is transforming, thanks to an investment in Australia’s largest cultural infrastructure project, into a truly world-class art precinct,” TFE Hotels’ CEO Antony Ritch said. “Southbank is connected to the best of Melbourne.
