Perched on Level 12 of Hyatt Regency Sydney, Zephyr Sky Bar continues to redefine the CBD's bar scene, welcoming this glamorous experience to help kick off the season in style in a collaboration between two opulent icons.

Launching this November, the refreshed summer menu pairs effortlessly with Zephyr's sparkling new Moët & Chandon offerings, capturing the spirit of the season with vibrant, inventive dishes and cocktails. Guests can savour the elegant champagne-coloured décor inspired by the gilded glam of the iconic Moët bottle, take in sunset views over Darling Harbour, and enjoy signature champagne cocktails like the Golden Bubbles with gin and fresh mango, the Sunny Elder Fizz with elderflower liqueur and orange juice, and the Basil and Limoncello Spritz with basil syrup—each topped with Moët for a luxurious sparkle.

For those seeking something beyond champagne, the new menu also features a range of unique summer cocktails that promise to excite Zephyr regulars and new visitors alike. Notable additions include the Coco Loco, crafted with coconut fat-washed Tequila Blanco, Aperol, and a volcano salt rim; the Raspberry Skyline, a fun blend of vodka, Framboise, fresh berries, and citrus with a playful touch of popping candy; and the Fig and Spice Delight, combining vanilla spiced Mezcal, fig-infused Select Aperitivo, and aged sweet vermouth, garnished with caramelized fig for an indulgent finish.

Complementing these inventive cocktails is an equally daring dining menu crafted by Executive Chef Sven Ullrich. Dishes such as the vibrant Tuna Crudo with citrus caper vinaigrette, the indulgent Lobster Popcorn with smoked salt and secret sauce, and the Foie Gras and Wagyu with torched foie gras, beef tataki, and cured egg yolk add to the elevated experience, creating the perfect pairing for Moët champagne or the new cocktails.
