Launching this October, Sailmaker Restaurant at Hyatt Regency Sydney invites you to their new Kitchen Table - a thoughtfully sourced, multi-course dining concept and the restaurant's most indulgent and educational seafood experience yet.

With a premium chef-selected menu, the Sailmaker Kitchen Table is a celebration of seasonal flavours and local producers. An immersive gastronomic journey, the menu highlights the restaurant's sustainable ethos, and is a hallmark of Executive Chef Sven Ullrich's culinary approach.

Led by Chef Sven and his exceptional team, the exclusive experience promises guests a unique blend of fine dining in a family-style, intimate setting. It offers front row seats to Sailmaker's innovative kitchen and a special glimpse into the preparation techniques and inspiration behind the restaurant's most luxurious dishes.
“Sustainability is at the heart of our offering at Sailmaker, and we've created the Kitchen Table experience as a way for us to share our passion for the planet with our patrons and connect our guests in a meaningful way with the stories behind each dish,” explains Chef Sven.

“We want to inspire and excite our Kitchen Table guests on our sustainability principles and demonstrate some of our sourcing and preparation techniques first-hand, while also revealing a few culinary secrets for diners to take home.”

The experience has limited seating for ten guests per table and begins with sparkling wine and canapés on arrival. Followed by tapas, shared family-style entrées and a plated main course, the evening promises a deluxe feast for the senses. The seafood is prepared fresh in front of guests, along with a series of interactive demonstrations led by the Sailmaker culinary team. The evening concludes with Sailmaker's signature dessert trolley service.

To elevate the premium Kitchen Table experience further, each course is expertly paired with a selection of the finest New South Wales wines, personalised to taste by Sailmaker's resident wine expert.
