Hyatt Regency Brisbane is thrilled to announce the appointment of Fuji Taukatelata as Executive Chef. Chef Fuji's culinary journey is as inspiring as it is unconventional, beginning with aspirations in criminology before discovering her true passion for culinary arts. Her career has seen her rise from humble beginnings to leading the culinary division of one of Brisbane's iconic hotels.
Chef Fuji's connection to food is deeply rooted in her heritage, with her mother serving as a guiding inspiration. Her passion for cooking was sparked during a hospitality course she took alongside her criminology studies. A school placement at Campbelltown Catholic Club soon evolved into the starting point of her dynamic culinary career, where she quickly fell in love with the boundless possibilities of becoming a chef.
Eager and ambitious, Chef Fuji joined the opening team of La Rosa in Sydney, where she actively sought out mentors and honed her craft under the guidance of renowned chefs such as Kylie Kwong and Peter Gilmore. Her dedication and talent were recognised early on when she won both the 'Taste of Success' Scholarship and the Aqua Dining Scholarship, which led to her pivotal role at the Michelin-starred The Ledbury in London. There, she worked alongside acclaimed Chef Brett Graham, progressing from Stagiaire to Commis.
In London, Chef Fuji's quest for a relaxed yet creative environment led her to Soho House's Electric House and Electric Diner, where she infused traditional comfort foods with her signature inventiveness, serving A-list celebrities including Paul McCartney, Hugh Grant, Annie Lennox, and Rita Ora to name a few.
Chef Fuji brought her extensive experience to Park Hyatt Sydney as Executive Sous Chef in 2018. Her style is unpretentious, characterised by the use of simple, fresh, and seasonal ingredients to create sophisticated yet welcoming dishes. Each plate she presents tells a story, reflecting her journey from fast food to fine dining.
Now, as the newly appointed Executive Chef at Hyatt Regency Brisbane, Chef Fuji will elevate the culinary experience across the hotel's esteemed venues, including Lennons Restaurant & Bar, Hibiscus Bar & Terrace, events and the in-room-dining function. Her leadership will bring a fresh and elevated dining experience, focusing on innovation and sustainability across the hotel's dining and event offerings.
Chef Fuji's love for the arts and music continues to influence her culinary style, adding a layer of creativity and inspiration to her cooking. She firmly believes that food goes beyond nourishment; it is a powerful medium for storytelling and unity, bringing people from diverse backgrounds together. “At my table, there's always a seat for those seeking comfort, renewal, and a chance to share their stories,” says Chef Fuji.
