Luxury boutique hotel Kivotos Santorini unveils a new culinary chapter with the launch of a Chefs Dinner series at its signature restaurant, MAVRO. Spearheaded by internationally acclaimed Chef Dimitris Katrivesis, the series will see MAVRO join forces with globally renowned chefs and culinary experts who, together with Chef Katrivesis, will curate bespoke six-course degustation menus for these one-day events each month this season (May-October).
Nestled atop the highest point of Santorini's caldera in the heart of Imerovigli village, MAVRO's glass-front terrace boasts breathtaking 180-degree panoramic views of Santorini's world-famous sunset, presenting a majestic setting for the newly debuted series. The concept of the Chefs Dinners reflects the hotel's continued commitment to crafting original guest experiences and will see MAVRO expand and elevate its gastronomic profile internationally by welcoming Michelin star chefs from around the world.
The series kicked off on 18 May with renowned 1★ Michelin Chef Alex Dilling of London's Hotel Café Royal. The evening featured a meticulously curated tasting menu where tradition met innovation through a blend of cooking techniques inspired by Santorini's rich gastronomic tapestry and globally inspired flavour pairings. Each dish invited guests to indulge in a symphony of flavours with locally sourced ingredients nurtured in volcanic soil and fresh fare sourced from the island's shores complemented by fine wines from local vineyards.

By partnering with some of the most talented and innovative chefs around the world, we are excited to present MAVRO as an international culinary destination in Santorini for all to experience,” shares Dimitris Katrivesis Head Chef of Mavro.

About Dimitris Katrivesis
Dimitris studied culinary arts in 1996 in Athens. His a desire to discover other flavours and ingredients of the world and create a global style of cooking without borders, led him to travel to the Canary Islands in 2003. In 2005, he joined Ferran Adria's team at the three-star El Bulli, then, the World's Best Restaurant. In 2006, he travelled to Paris and studied at Le Notre School, where he learned the basics of pastry making. He then returned to Tenerife and opened his first restaurant Alkimia. In 2007 he opened Siphon. In 2010, he joined Albert Raurich's team at the Michelin-starred Dos Palillos in Barcelona. In 2012, Dimitris, seeking new ingredients and knowledge, went to Tokyo to the three-star Ryugin restaurant, ranked 21st in the world. In 2013 he moved to London to complete his research on Nikkei cuisine around the world. In 2014, the chef introduces Nikkei cuisine in Athens and since 2015 he has been developing culinary concepts worldwide with projects in Toulouse, Paris and Monte Carlo. Dimitris is currently the owner of two Peruvian pop-up restaurants, La Pantera Negra and Mistura, and since 2023 he has been executive chef at Mavro Restaurant, the 5* Kivotos Santorini.
About Alex Dilling
London-born Alex Dilling discovered his admiration for food at a young age. Discovering different techniques and products during his travels, Alex developed a refined and "passionate palate" with a particular love of European cuisine. His culinary journey began under the legacy of Alain Ducasse at Adour in New York. Under the guidance of the esteemed Didier Elena and Tony Esnault, Alex and his team earned two Michelin stars in early 2012. Moving on to the restaurant gem, Caviar Russe, Alex developed a special love for caviar, which remains to this day one of the most celebrated ingredients in his cooking. After returning to the UK, Alex joined Helene Darroze, where he led the culinary team as Executive Corporate Chef, helping to maintain the elite two Michelin two-star restaurants between London and Paris. Alex continued to inspire and elevate the culinary scene in London and in the kitchen at The Greenhouse, attracting an international crowd who travelled across the globe to experience and taste the wonders of his menus.
