Bangkok – 10 May 2023: A contemporary hotel opening in the heart of Chiang Mai’s historic district by summer 2023, InterContinental Chiang Mai Mae Ping is pleased to announce the appointment of Denwers Rattan as Executive Chef. In his new role he will be in charge of the culinary direction, positioning and operations of the hotel’s four restaurants and bar, as well as overseeing catering and in-room dining.
The Thai-Vietnamese national who was born in Paris and grew up in Brussels joins InterContinental Chiang Mai Mae Ping from InterContinental Hanoi Landmark72 awarded Vietnam’s top 10 hotels in Asia in 2021 by Conde Nast Traveler, where he was instrumental in steering five restaurants and bars to success in his role as Executive Sous Chef. Prior to that he led the team at Hanoi’s fine-dining establishment The Clover at Ngoc Thuy helping the restaurant win the title of the best French fine-dining venue in Hanoi in 2018. Between 2013–2017, Chef Rattan was managing the kitchen at five-star Sofitel Brussels Europe as Executive Sous Chef, with a brief stint at Fleur de Lys by Hubert Keller at Mandalay Bay casino in Las Vegas before that.
During his formative years, Chef Rattan made his name in a number of critically-acclaimed restaurants including spending four years at Michelin-starred Atelier de Joel Robuchon in Paris and Tokyo; and the distinguished Sea Grill by Yves Mattagne, a two Michelin-starred restaurant at Radisson SAS hotel in Belgium, which he joined in 2000 as an apprentice commis and graduated six years later from as Chef de Partie. His interest in the culinary arts stems from his early childhood experience helping out in the kitchens of the three Thai and Vietnamese restaurants that his family ran in Brussels.

Chef Rattan is a holder of degrees from Haute École Lucia de Brouckère and Institute Emile Gryzon. In his pastime, he enjoys playing golf and exploring new cuisines – hobbies that Chiang Mai offers plenty of opportunities to pursue thanks to the area’s 18 golf courses ranging from heritage to the most recent, world-class additions as well as the vibrant flavors of northern Thai cuisine supported by organic farming and agriculture.
