Tokyo, Japan – September 20, 2018 – The Prince Gallery Tokyo Kioicho, A Luxury Collection Hotel, proudly introduces a special culinary experience - SUSHI KAISEKI 'Sumi no Toki' - in collaboration with international fashion designer, Hiroko Koshino, and tableware manufacturer, Nikko Company. Guided by Koshino, who also designed its exquisite tableware, the special menu will be available at WASHOKU 蒼天 SOUTEN restaurant at The Prince Gallery Tokyo Kioicho from now until September 30, 2018.
The 'Sumi no Toki' tableware collection is produced by major Japanese ceramics manufacturer, Nikko Company, founded in Kanazawa in 1908. A collection created by Koshino in collaboration with Nikko is based on the concept of 'tableware that chefs will be inspired by'. The pieces capture the sweep and motion of painting, with the seep and flow of inks and paints. They also embody the Japanese aesthetic of 'ma' (space or void) within their plain white surfaces. The 'Sumi no Toki' collection was awarded first place in the Licensed Collaboration Category of the Tableware International Awards of Excellence 2018.
Hiroko Koshino is a graduate of the prestigious Bunka Fashion College in Tokyo and has presented her collections in many fashion capitals worldwide, including Tokyo, Osaka, Paris, Rome and Shanghai. Her designs range from women's and men's apparel to lifestyle goods. In recent years, she has also been active as an artist, opening KH Galleries to present her own work in Ginza in 2012 and Ashiya in 2013.
The special menu will showcase the skills of WASHOKU 蒼天 SOUTEN's sushi chef Tetsuya Yamada. The dinner encapsulates the spirit of Japanese lifestyle and food culture, with Koshino's ideas manifested in a presentation on her exquisite 'Sumi no Toki' line of dinnerware. Koshino oversees the presentation of the dishes, transforming SUSHI KAISEKI from its typical traditional cuisine, by playfully combining elements of art and entertainment. Her dinnerware designs are based on the stark beauty of Japanese black ink ('sumi') and its capacity to spatter, smudge and manifest countless other expressive characteristics. The density, momentum and flow of ink in Koshino's creations provide a beautiful backdrop for the delicate beauty of Chef Yamada's creations.
As a part of this culinary extravaganza, guests have the chance master the sushi art in a class, “Gallery Experience: SUSHI KAISEKI Sumi no Toki”, every Wednesday in September. Chef Tetsuya Yamada will demonstrate traditional Japanese Sushi making, showcasing the beauty and intricacy of sushi art. Traditional Japanese dessert ingredient 'Monaka' also inspires the 'Monaka Sushi', an original dessert piece guests will create with their chosen ingredients to conclude the artful journey.
Located on the 35th floor of The Prince Gallery Tokyo Kioicho, WASHOKU 蒼天 SOUTEN combines traditional flavours and fresh ingredients to present an updated, contemporary take on Washoku, the traditional cuisine of Japan. Washoku has been included in the UNESCO list of Intangible Cultural Heritage of Humanity and has since enjoyed a global popularity boom. The SUSHI KAISEKI 'Sumi no Toki' special menu is a collaboration initiative designed to convey the appeal of Japanese culinary culture from an artistic perspective, with Tetsuya Yamada, Head Chef at WASHOKU 蒼天 SOUTEN, bringing the special SUSHI KAISEKI to life with his playful twist on Sushi.
SUSHI KAISEKI 'Sumi no Toki' is served at JPY 20,000 and the stay package including breakfast as well as this unique menu will be offered starting from JPY 54,165 per person.
