Paco Roncero Presents the Refurbished La Terraza Del Casino

Two Michelin Star restaurant La Terraza del Casino, at the NH Collection Casino de Madrid, has reopened with a new gastronomic offering from renowned avant-garde chef Paco Roncero, following a complete renovation. The innovative concept turns dining into an unforgettable sensory experience, with the interior having been redefined by Jaime Hayon, one of the current leading figures in the world of design, and the exterior terrace the work of Julio Guixeres.  Meanwhile, haute couture also has its place thanks to Tom Black, who have designed the new staff uniforms.

How to have the world served to you on a plate
Roncero has described the new concept as “a new era full of magic, creativity and plenty”.  In this new era, details such as the bread service and the presentation of the sweet have evolved and take centre stage in a new way of understanding dining room service. Interaction with diners becomes the highlight, making the experience in the restaurant a real gastronomic performance in which everyone from kitchen to front of house staff are involved to offer a show that is savoured with the five senses.

Both traditional and Roncero's Spanish avant-garde cuisine, as well as the best international cuisines, are present on the menu of La Terraza del Casino. Major influences from all gastronomic cultures that come together to give dishes like American-style prawns (Gamba Americana), Curry Pilpil Kokotxa (Kokotxa al Pilpil de Curry) and John Dory à la Royale with Mole (Gallo a la Royal con Mole). Roncero's creations represent the fusion of great classics of international cuisines, where the excellent raw material gets all the attention to produce a unique experience for the palate.

Gourmet Design
As well as sharing a great friendship and the same passion for creating, chef Paco Roncero and designer Jaime Hayon have something else in common: both have been part of the creation process of La Terraza del Casino restaurant.

Specifically, Jaime has been responsible for giving the restaurant a new lease of life, turning it into a warm space where creativity and imagination are given free rein. In this era, the area surprises us with gentle lines, the rounded and fun shapes that are so typical of Hayon's world. All this is presented in blue and green aquamarine tones, against which golden decorative elements stand out. According to Jaime: “To me, La Terraza del Casino has always been a platform for experimenting, a temple to cuisine, but also a place where interior design becomes an art, where colour flows and the furniture tells stories, details that describe dreams.”

Haute cuisine with haute couture
It is not just La Terraza del Casino that has dressed up for the occasion. The image of the waiters has also changed, created by Tom Black. “We took inspiration from the beauty of the location, the ecosystem that is created in a meal at Paco Roncero's Restaurant, and in the closeness of its staff, as well as making nods to some colours present in Hayon's decoration”, says Juan Terrer Reyero, Tom Black's CEO.  

About Paco Roncero
He is one of the leading figures in Spanish avant-garde cuisine both in Spain and beyond, with a technical and creative cutting-edge approach that is reflected not only in his style of cooking, but also in the way of offering and understanding gastronomy as a unique sensory experience.

He trained at the School of Hostelry and Tourism of Madrid and completed practical training stages in Zalacaín and in the Ritz Hotel until he joined NH Collection Casino de Madrid in 1991. Five years later he was appointed head chef of the banqueting department of that establishment and was promoted in 2000 to head chef of the Casino including management of banquets and La Terraza del Casino restaurant, by then also under the management of NH Hotel Group.

It is this stage of his career that saw his creative personality bloom, representing a genuine revolution for the NH Collection Casino de Madrid and the Spanish culinary panorama. In January 2002 he earned his first Michelin star, becoming the first private Club in Europe to receive a star. He has also been recognized at the most prestigious gastronomy awards, such as the Chef L'Avenir Award in 2005, granted by the International Academy of Gastronomy, and the National Gastronomy Award for 2006 from the Spanish Royal Academy of Gastronomy.

Paco Roncero's cooking is the result of masterly skill in the most highly-evolved culinary techniques, his vast creativity and innate sensitivity and of his capacity for innovation and investigative spirit, a style that has led to an important contribution to leading-edge world cuisine.
