“Assaggia Roma,” is now open in the charming setting of Rome's luxurious boutique hotel Margutta 19, just a 4 mins walk from the Spanish Steps. Offering a rediscovery of traditional cuisine, created from recipes passed down by grandmothers, made with local products, and served in an innovative formula of small-plate tasting menus.

Under the careful and imaginative guidance of Michelin-starred chef Angelo Troiani, Daniele Ciaccio and his team bring together the flavours and aromas of genuine, old-style, strictly seasonal cooking, transforming them into gourmet dishes. Assaggia Roma offers guests two tasting menus: 6 or 9 small plates, from first course to dessert, accompanied by the best from the Lazio region's vineyards, on a wine list that also broadens its gaze to the finest domestic labels. 

Besides the unique setting and the quality of the wine and food, Assaggia offers its guests elegantly simple hospitality in an intimate, relaxing garden restaurant, in an atmosphere that is convivial yet discrete and homey. Assaggia takes us on a journey where every course helps cast light on Rome's wine and culinary heritage.

The Assaggia Roma formula is the natural continuation of “Assaggia” – a project that began with Leonardo Stabile's original idea in 2014. Successfully launched at Porto Rotondo, the project aimed to recover the invaluable heritage of Sardinia's ancient recipes served to the gourmet public by “cuciniere” – the Sardinian housewives placed in charge of the Gallurese restaurant. Now this project has matured and is stepping out onto the Roman stage thanks to the success of Stabile's original idea, enhanced by Angelo Troiani's contributions. Alberto Gaido, who led Assaggia Roma's start-up, will oversee the brand's commercial development.

As Leonardo Stabile explains, “Our aim in opening Assaggia Roma was to offer, on the tough and competitive Roman landscape, a thoroughly innovative food-service style and formula – a formula that in recent years has taken hold at Porto Rotondo, making it one of the Costa Smeralda's top-ten restaurants. We offer our guests a journey into typical regional cuisine, a journey to rediscover and enjoy an invaluable heritage of traditions, typical products, flavours, and aromas, starting from our grandmothers' recipes, now enhanced”, Stabile concludes – “by the touch of a fine chef like Daniele Ciaccio, and by Angelo Troiani's Michelin-starred prestige.

According to Michelin-starred chef Angelo Troiani, “The Assaggia project won me over right from my experience at Porto Rotondo, for its ability to combine tradition and innovation at the table. With Daniele Ciaccio and our kitchen team, we aim to bring new freshness to Roman food service, by introducing a new style to the habits and food choices of gourmets from Rome, Italy, and around the world. Another aspect worthy of note” – adds Troiani – “is how Assaggia has committed to going organic, by selecting raw materials with the utmost care and relying only on producers of certified quality and reliability. The objective is to offer our guests the finest (ingredients), while also lending a hand to the local farm and food economy.

For an aperitif or after-dinner drink, Assaggia Roma also offers a cocktail list designed by Tony Rosetti, and a prestigious menu of fine liquors, to be savoured in an atmosphere where the blend of elegance and informality makes guests feel truly at home.
