The Michelin-starred Executive Chef of YEN visited the wonderland of Taiwan-Taitung County to discover various indigenous food ingredients, such as aboriginal pigeon pea and rare spices. Chef Wo also visited local markets for organic agriculture products and learned a lot from the local vendors. Originated from Hong Kong, Chef Wo joined W Taipei since last February and has been here for more than a year. Since then, he has been in love with the lovely hospitality culture, beautiful landscape, and numerous fresh food ingredients in Taiwan. This summer, Chef Wo went to the East coast of Taiwan to experience the very different aboriginal culture in Taitung. In Taitung, he tried local homemade dishes, visited traditional markets, discovered indigenous spices, and even learned how to surf with local kids. After this fruitful happy journey, Chef Wo brought great inspiration back with him and curated brand new a la carte menu. “I'm very glad to have this chance to discover the beauty of Taiwan and will definitely endeavor to create innovative gourmet dishes for every guest who comes to YEN!” said Chef Wo.
“Enchanted Formosa!” is a selection of delicate dishes curated by Chef Wo, which showcases the real beauty of Formosa-Taiwan. “Braised Australian oxtail with aboriginal pigeon pea” and “Double boiled chicken soup with Wulai mountain aboriginal spice, dried scallop, and abalone” are two signature dishes utilizing indigenous ingredients. And “Steamed lobster with egg white, sea urchin in lobster bisque”, “Grilled Australian M9 wagyu, white asparagus”, “Braised South African abalone in oyster sauce” are delicious main dishes with delicate and complex cooking method, which also represent the wonderful agriculture and fishing industry of Taiwan. And let's not forget two Chef Wo's favorite dishes “Deep fried American oyster with port wine sauce” and “Crispy noodle, scallop, seasonal greens with X.O. sauce”, which presents the nouvelle style of contemporary Cantonese cuisine, a perfect way to finish a wonderful tasting journey.
