InterContinental Hong Kong's popular STEAK HOUSE winebar  + grill will present “A Taste of Ireland”  with JOHN STONE top quality Irish Dry Aged Beef (Prime Rib, Tenderloin and Rib Eye), plus a selection of  Kelly oysters from Galway, organic salmon and farm-fresh cheese. InterContinental Hong Kong's Executive Pastry Chef is also creating a special ice cream dessert made with Killowen farm yogurt. The special à la carte menu is available from September 4 – October 31.

The “Taste of Ireland” à la carte menu includes:

About John Stone Dry-Aged Beef

John Stone (Owner & master butcher), along with Allan Morris (MD, owner & master butcher) and Martin Casey (Operations manager & master butcher) have been dry ageing beef for three decades. Their beef is dry-aged on the bone which adds to the flavour.

Each cow has a passport with all the information about its life, which is then transferred onto the carcass label, for a “farm to plate” experience.

What is so special about Irish beef? In Ireland there are more cows than people - with 60,000 beef farms in Ireland, each averaging only 50 head of cattle per farm.

Irish cattle lead a stress-free life. All the cattle are grass-fed. They enjoy the perfect grazing conditions with plentiful water and the temperature benefits from the Gulf Stream. The massive  limestone in Ireland provides drainage and introduces calcium into the soil. The grass also has high sugar levels, which are good for grazing cattle. Grass-fed beef is lower in fat and therefore lower in cholesterol and better for your blood sugar levels. It is also higher in Omega 3 (around 50% higher) and Omega 6, than grain-fed beef.

John Stone beef does not contain any hormones or antibiotics. It has a real beef flavour. The taste of the beef is not masked and covered by the taste of grain or corn.  As per John Stone, “It's not just about what we eat, it's about what we eat, eats”. 

John Stone received Gold Medal status at the World Steak Challenge which took place in July 2017.
